I'm not sure about the Mickey bars, but you can find the Dole Whips at Aloha Isle across from the Swiss Family Robinson treehouse in Adventureland (Magic Kingdom). The consistency is yogurt like, but lighter.
Mickey Bars are sold at ice cream carts around the park. No specific place, just wherever you see an ice cream vending cart, there are bound to be Mickey bars.

Just to clarify, a dole whip is a soft serve ice cream treat. You can get straight pineapple (which is a true dole whip), pineapple and vanilla swirl, straight vanilla, straight chocolate, or a chocolate and vanilla swirl. You can also get a pineapple float which is the pineapple soft serve in pineapple juice.
You must experience the pineapple dole whip. You can see from my tag my feelings on this.
