The Beach Club Marketplace has some really good (and big) ones. Last fall my sister and I shared the Chicken Ceaser Salad for lunch several times. They have quite a few different veggies and topings - you tell them what you want, they make it and toss it for you - YUMMY!

I had really good luck with the food courts at the hotel's. I had a great grilled chicken salad at SSR. I know I had a few salads at Pop's food court too.
Another place I really liked the salad was Planet Hollywood!

I agree with the Brown Derby's cobb salad and Artist's Palette at Saratoga Springs has some really nice salads. I also love the China Island Chicken Salad at Rainforest Cafe. I just had one (again) about a week ago at the RFC in Animal Kingdom and it was wonderful as always. Really my favorite salad anyplace! The salad bar at Boma is amazing and has some really nice options for salads.

My suggestion at the Magic Kingdom:

Columbia Harbor House. My mom and sister ordered a couple of big honkin' salads, and they did look delicious.

My favorite WDW salad comes from Kona; it's just the regular chicken Caesar, but boy is it delicious! And, it is HUGE; more than enough for one person's entire meal, or easily split between two for a side.

Columbia Habor House - Garden Galley Salad - Mixed greens with pineapple, feta, pecans and chicken with a raspberry vinaigrette

Wolfgang Puck Express - Chinois Chicken Salad - napa and purple cabbage, carrots and shredded chicken in asian honey mustard vinaigrette topped with fried wontons

Kona Cafe - Coconut Almond Chicken, Chicken breasts breaded in coconut and ground almonds atop a salad of mixed greens, pickled ginger, blue cheese and strawberries.

My favorite salad is the salad that comes with dinner at the Garden Grill in Epcot. Some of the ingredients are grown right at the Land Pavilion, and the dressing is awesome. Very fresh tasting!

They don't serve the salad at lunch, tho.
