When to make FastPass+ res?

My family and I are frequent Disney travelers, however, we always stay at the Shades of Green resort so we never received the magic bands or FastPass+ option. But this time, we are staying at Port Orleans and we are getting the magic bands. My question is, Do Fastpass+ Reservations fill up fast for popular rides and lines like (elsa and anna) or the new mine train ride? Im nervous that i wont be able to get the Fastpasses my family wants for our trip. Usually I wait up until midnight 180 days before our vacation to make dinner reservations for the "be our guest dinner" because those fill up within minutes of availability. Is it the same with FastPass+ reservations?

A&E is a very hot ticket and FP+ are usually gone within minutes of going live. 7DMT FP+ availability has been fairly ample with multiple times to select from. That, of course, could change but for now there aren't a lot of reports of people not being able to book it.

The biggest problem with A&E is that when staying off-site (such as at SoG) you're allowed to book FP+ 30 days in advance whereas those staying on-site have the advantage of booking 60 days out. I ran into this problem for our trip earlier this month. There was zero availability for A&E for any day during our 9 days in the World, but I checked the system daily and just a couple of days before our trip was finally able to snag a FP+ for us.
