When to go? 11/30-12/04 OR 12/7-12/12

We are going on our first Christmas trip to Disney, and was wondering if anyone has been during this time and which week may be LESS crowded....

Both times are really good for travel. Pop Warner will be there from December 7-13 and while I've heard people say it is more crowded during that time, I never had that experience myself.

You can see in my signature that I went for both periods and my opinion in your case probably the first option. When we went, we arrived the day after Thanksgiving, Friday, and on Saturday we went to Magic Kingdom and it was very crowded, because Thanksgiving weekend. When we went Monday WOW! I was in shock, it was liked a completely different park, extremely calm, not crowded at all , we didn't have to do lines for the rides (except for Dumbo, there is always at least a little one).
