When to book?

I have been trying a few dates to get an idea of cost for one night at a DLP hotel (to take advantage of early hours since if we go we will only have one day). However, I've tried dates in May, June and July 2017 and I'm getting no availability. They can't already be sold out, could they? Are they not available yet? What is the best time frame for booking?

Which website are you checking on? I checked on the Irish website http://www.disneylandparis.ie/ and put in dates for May, June and July 2017 and there is availability

Looks like it's not possible to book a single night at this point. Nights come up if I check 2+ nights, but not anything for a single night.
