When can I book for Jan 2017 WDW? Also, does the free dining offers ever go into Jan? Thanks for any help

You can book a room only via phone up to 499 days out. So as of today, you could book a room only for any time in January 2017. In order to book a package or to book online you have to wait until the rates for 2017 come out. The next year's rates usually come out July-August timeframe.

you can book as previous poster said--you just need to be aware that you're booking at full price, and you'll need to call and make changes when discounts are released (typically about 4-5 months out)

Also keep in mind that the price you are booking at is this year's price. When booking that far out your total price will go up when Disney releases the resort prices for next year (likely in mid-summer).
