Based on your experiences, what is the likelihood of having strollers and/or wheelchairs stolen while your family is visiting an attraction? My niece plans to bring her own stroller for her toddler, and my mother has her own wheelchair walker. Thank you for any input you Disney veterans can provide.:)

Based on experience, 0% as I've never had someone steal DD's stroller. Thefts certainly do happen but it's more focused on someone taking something of value that was left in a stroller (think: digital camera, iPad, etc.). WDW isn't immune of those with sticky fingers. Also, if the stroller/wheelchair looks like hundreds of others, consider tying something to it (balloon, ribbon) that makes it easily identifiable as it can be incredibly easy to make off with a stroller thinking it's yours only to realize that it isn't.
