What's Your Favorite Cake?

There are so many cakes I love...


But my all time favorite, number one best cake I ever put in my mouth is a Southern classic that I discovered at a wonderful little dessert restaurant in Athens, GA back in the 80's called the Flamingo Room... Hummingbird cake!! It is a banana cake with nuts and crushed pineapple in it, then frosted with heavenly cream cheese icing. OMG, drooling just thinking about it. Maybe I'll attempt one this evening.
They have this at a small local restaurant, very good cake (but yikes..they charge $5 for a slice of it!)..one of these days I will attempt to make one from scratch!
 
Here's the recipe I have for Hummingbird Cake.

Hummingbird Cake
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 cups sugar
1 teaspoon salt
3 eggs, beaten
1 cup vegetable oil
1 1/2 teaspoon vanilla extract
1 (8oz) can crushed pineapple, undrained
1 cup pecans OR chopped black walnuts (plus additional for topping - see below)
1 cup chopped bananas


Preheat oven to 350F. Grease and flour 2 9" round cake pans.

Combine first 5 ingredients in a large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, pecans or walnuts, and bananas.

Spoon batter into prepared pans and bake for 25 - 30 minutes. Remove from oven and allow to cool 10 minutes. Remove from pans and cool completely before frosting.

Hummingbird Icing
1 (8oz) package cream cheese, softened
1/2 cup butter
1 pound powdered sugar
1 teaspoon vanilla

Combine cream cheese and butter, mixing until smooth. Beat in sugar and vanilla until light and fluffy.

Spread frosting between layers and on top and sides of cake. Sprinkle additional chopped nuts of choice on top.
 
Lately, my husband has had a complete obsession with cake. His favorite is chocolate with whipped chocolate icing, and he's been bringing one home every other week. This past Friday, he brought home some vanilla bean ice cream, too. It's so hard to resist when I'm home all day alone with it! :crazy2:

I love carrot cake or spice cake with cream cheese icing, or German chocolate cake. Don't get to have them often anymore, but I do enjoy a very small piece from time to time.

My Mom also makes a killer pistachio chocolate marble cake that was the standard birthday cake for all of us when we were growing up (we still all request it at every holiday).
 

my fav is champagne cake and second fav is homemade angel food cake with 7 minute frosting--mom always made for my birthday

Better than Sex Cake:
Bake a devils food cake according to the box in a 13x9 pan. While baking, in a saucepan over low heat, combine one can of sweetened condensed milk and one jar of caramel sundae topping. Stir and let heat together until warm. As soon as cake is done poke hokes through top with a chopstick- be careful not to go the whole way to the bottom of the cake. Take the caramel mixture and pour directly over the cake and make sure you get into the holes. Immediately after, top caramel mixture with crushed heath bars or just toffee chips. Put in fridge and let chill overnight. Pull out of fridge and frost top with cool whip or fresh whipped cream and more crushed heath bars.

Banana Pudding poke cake:

if you can find a banana cake mix use that, if not, yellow cake works well also. Bake according to box in a 9x13 pan. Once cake comes out of oven, allow it too cool for a few mins then poke holes in cake with chopstick or a wooden spoon handle. This one you can poke to the bottom of the cake.

In a bowl, whisk together 2 packages of instant banana cream pudding and 4 cups milk. Let pudding sit for about 2-3 mins to thicken but don't let it completely set- it should be pourable. Pour pudding over cake and make sure you get it in the holes! Spread it all out and push the pudding into the holes if needed. Put the cake into the fride to set and cool.

once the cake is completely cooled, spread cool whip on top. Top the cool whip with crushed vanilla wafers. Serve the cake with freshly sliced bananas on top.
 
I haven't read the whole thread, but has anyone mentioned Smith Island Baking Company cakes? The yellow cake with fudge icing (between the 9 layers) is phenomenal!

OMG! that one sounds out of this world..this is gonna be #1 on my 'to be baked' list next..thanks for the recipe!
