I'm trying to expand my list of recipes that I can fix quickly, and that my family will eat. Please post the recipe, too, if you don't mind!

Here's my favorite:

Chicken Quesadillas

1 can white chicken meat
1tbl chili powder
1tsp minced garlic
1 can refried beans (optional)
1 1/2 cups shredded cheese
6 fajita-size tortillas
fresh chopped cilantro (optional)

Preheat oven to 450. Spray cookie sheet with cooking spray. Mix chicken, chili powder and garlic in microwave safe bowl for 3 mins. Heat refried beans. Spread beans on 3 of the tortillas, then chicken, cilantro, and then 1/2 cup of cheese. Press tortillas on to each. Bake 5-7 mins. Garnish with sour cream and picante.

The whole process takes about 15 mins.
 
My husband is a meat eatter, and he likes pork chops with his homemade hot sauce, uses it for everything.

5-6 Pork Chops
Garlic Salt
Pepper
Flour
Cream of Mushroom-(optional)


Just season the pork chops in the flour, garlic salt, and pepper mixture. Fry till brown, then bake in the oven till the pork chop is cooked. Temp. will differ depending on the size of the pork chops. You can also add on a can of cream of mushroom on it.


My stepson loves Chicken of almost any kind, but he likes the shoyu chicken that I make.

5 Pound bag of Chicken
3-4 Cloves Garlic-Crushed
1 Chunk Ginger-thinly sliced
2 Cups Soy Sauce-(shoyu)
1/2 Cup Sugar
3 Tbsp. Mirin-(Japanese Sweet Rice Wine)
1 Cup Water


In a big pot, boil washed chicken in a pot of boiling water to take off the access oil. Drain and make mixture of shoyu, sugar, garlic, ginger, water, and mirin. Once the mixture comes to a boil, add in the chicken, and let it cook for an hour on low heat, always mixing the chicken so that it does not burn.



These are really easy recipes that you can just put together while preparing the rest of your meal.

Taco Salad

1 can Hormel chili with beans
1 bag of lettuce
1 cup of shredded cheddar cheese
1 small can of cut black olives
dollop of salsa and sour cream
Put tortilla chips on the side!
 

:tongue: Take out!!!!:tongue: I either cook a full meal, or we eat take out, there is no in between here!
 
This is our newest low carb favorite, it sounds strange but I LOVE White Castle hamburgers so it does it for me!

WHITE CASTLE HAMBURGER PIE
1 pound ground beef
1 packet onion soup mix, dry (1/2 of a 2 packet box)
2 eggs
1/2 cup mayonnaise
1/4 cup heavy cream
8 ounces cheddar cheese, shredded
Salt and pepper, to taste

Brown the hamburger with about half of the onion soup mix or seasoning mixture below*; drain fat and season to taste with salt and pepper. Stir in remaining soup mix or seasoning mixture and put meat in a greased 9-10 inch pie plate. Stir in half the cheese, then top with remaining cheese. Beat eggs, mayonnaise, cream and a dash of pepper; pour evenly over meat. Bake at 350º for 30-35 minutes. Let stand 10 minutes before serving.

Makes 6-8 servings
Can be frozen

Per 1/6 Pie: 598 Calories; 53g Fat; 25g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs
Per 1/8 Pie: 449 Calories; 40g Fat; 19g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

Seasoning Mixture:
If you'd like to save a few carbs, you can use onion powder and dry minced onions in place of the onion soup mix, which has 16 carbs per packet. I used a mixture of 2 teaspoons toasted onion powder (available from Penzeys, or use regular onion powder) and 1 tablespoon dry minced onion. I also sprinkled a little onion powder in with the egg/mayonnaise mixture.
 
BBQ Chicken

4-5 Chicken Breasts
1 large bottle of BBQ sauce

Place frozen chicken breasts in crockpot. Dump a bottle of your favorite BBQ sauce over them. Set crockpot to "high" leave on high for about 4 hours, then cut temp. back to "low" for another 4 hours or so.

Easiest & best BBQ Chicken I ever made. :)
 
Actually, my list of "fast meals" is directly affected by how much pre-cooked chicken I have in the freezer. (I buy the large family packs & toss them in the crockpot. Then I shred it & freeze in meal size bags...it's like having the canned stuff & makes the prep time really fast!)

For a quick meal with raw, boneless chicken or fish, we like to just melt some butter & add the Lea & Perrins Worcestershire for Chicken. Dinner in less than 10 min. :teeth:

Another quick meal is a bag of salad shrimp in a jar of white sauce (alfredo) over linguine. Mmmmm ::yes::

Not really sure what to call it but DD loves this...asks for it at least once a week.

Cook up chicken tenders or chicken sausage in a frying pan with a little olive oil and garlic. Cook until lightly browned and remove.

At the same time heat up water for pasta (we prefer cappellini or fettucini) and make as directed on the package.

Slice up veggies --- we like to use zucchini, mushrooms, red or yellow peppers, and broccoli or green beans. Add a little more olive oil to the pan and saute veggies. Add a can of diced tomatoes (I find the ones in basil, olive oil and garlic really give it some nice flavor). Bring to a boil and then turn to a simmer. Add in the meat and fresh basil. Simmer for about 5-10 minutes.

Serve over pasta.
 
Southwestern Chicken Salad

- 1 package of Southwestern Chicken (Louis Rich is pretty tasty)
- 1 bag of lettuce (Italian mix, Romaine, etc... whatever you like)
- cheese
- any other toppings you like (tomatoes, bacon bits, Mexicorn, etc)
- Hidden Valley Southwestern Salad Dressing

Heat the chicken in the microwave (30 seconds, flip..do another 30 seconds if needed). Mix all together.

The great thing is that we can make big or small salads, depending on how hungry we are. :)

Alright, people. We seem to have gotten a smidge off topic. We're talking cooking, here. One of my least favorite things to do in life.

On second thought... that whole eating out thing may be the way to go....::yes::
