For me:

Gray = a color, or perhaps Lady Jane (who got beheaded) . . .

Grey = greyhound. A bus company or a racing dog in need of an adoptive home.

Grey (outside the U.S. and some parts of the U.S.) or gray (some U.S. only) describes the tints and shades ranging from black to white.

They are interchangable here in the US.
