What's a corn fritter?

Basically a batter that has corn (sounds weird I know, but it is SOOOOOOO good) that is fried. I serve it with butter and maple syrup. It's very easy and always a huge hit!

Doritos. The kids ate with Grandma and Mom is feeling too lazy to cook for just 1. (DH works nights).

Tonight, NC Beast had salad and a turkey sandwich before he went to work. I had Edy's Slow Churned Thin Mint ice cream and oven baked fries (I was not in the mood for meat or main meal stuff). Oh, I washed it down with Diet Pepsi w/ lime.

I'll be going to the grocery store in a couple of hours to buy a small roast for DH and Ds (who is home on spring break). It better be good after last nights meal, a new recipe that didn't go over so well but kept me in the kitchen all afternoon. I'll probably make fresh spinach with the roast, and a homemade marscapone and basil bread.

For me it was the cheese. Between the Velveeta cheese sauce and then having it topped with more cheese, it was just...ugh, LOL.

I'm not a cheese loving person anyway ~ mostly I just tolerate cheese ~ so I didn't have high expectations of it to start with but the kids LOVE food cooked with cheese, LOL so I try to make something like that for them sometimes.

Thanks!!! I LOVE macaroni and cheese and anything with melted cheese...so I'm going to have to try this recipe.

Tonight DH is fending for himself. I'm going out with some girlfriends to see "Failure to Launch"
