What's for dinner? Was it "budget"?

I tried a version of the Bubble up Enchilada casserole. Only I added rice (wanted to stretch it out a bit and plain cheese, sauce, biscuit and meat sounded a bit mushy), and some chopped up veggies (carrots and celery and tomatoes were on hand). Also skipped the olives. Left the biscuits and "sauces" the same. It came out pretty good and everyone liked it. I think I probably need to up the sauce a little to make it wetter but all in all it was yummy.

also boiled my hamburger meat and divided it. I'm still considering that. I use a pretty low fat meat and I'm not sure it did me any good. However I could totally see doing this with fatty meat.
 
We are going to a fish fry so all I have to make is corn pudding. It cost around $3.00 to make for a whole pan. We have a few friends who are catching a bunch of walleye this year so this is the 2nd fish fry in a week. Good thing we like it. :lmao:

1 lb elk meat in sauce .50 (we spilt an elk with some friends and it has more than paid for itself)

It's cool and rainy here today, so comfort food is in order. We're having company tonight. I'm making Florentine Pesto Chicken, a recipe from the allrecipes site. I've never made it before, so I hope it's good! (it's a 5 out of 5 star recipe). It was not budget...2 packs of alfredo sauce mix, 1 jar of pesto, 1 bag of baby spinach, a box of penne pasta, 6 chicken breasts, 2 cloves of garlic. Oh, and parmesan cheese.

OMGosh, have you bought Kraft parm. lately?? OUTRAGEOUSLY priced...on SALE for $4.19!! :sick: The last time I bought it, it was 2.99 for the jar! Needless to say, I bought store brand. Not my favorite, but I wasn't paying that kind of money for Kraft!

We have so much extra chicken! I've been salvaging it all. Yesterday before we left for the day, I made a crockpot chicken dish with stove top. Came home. It smelled great. But we had KFC to finish, it was quick to dish out, and that's what we did. So in the fridge the chicken dish went. Today, the dish wasn't looking so good. The stuffing was soggy. Yuck.

I threw out the stuffing. Shredded the chicken and made a chicken, canadian bacon, broccoli and cheese quiche. We'll have fruit with that. Bananas and/or applesauce. Depends on what the kids want. Anyway, the quiche smells wonderful. Better than the day old, soggy stove top dish! :upsidedow I also made chicken salad and used some of the chicken that was leftover from KFC in that as well.

What's for dinner at your house?
 
One of my sons made dinner tonight. We're vegan, and he found a recipe for a vegan Caesar salad that he wanted to try. So he made the dressing and croutons (from vegan bread), added those to romaine lettuce, then topped the whole thing with fake bacon bits and some seitan "chicken" strips that he grilled. Peaches for dessert. It was VERY good.

Last night was NOT healthy at all! We had been out all day shopping for various things we needed (it isn't nearly as fun as shopping for things you want!!!!) But I was beat.

I put in a frozen pizza I had gotten for $1 on sale.

So,

Instant Pudding $1.50 (with milk)

Tonight is quick & easy just because I don't want to fuss ;)

English muffin pizza's for my DD's $3.50

Watermelon $2.99 - for a whole one! I use my melon baller and make watermelon balls, everyone loves it that way and it's amazing how much faster it goes than if I just sliced it :confused3

Tomorrow night will be:

Grilled pork chops $5.00
Grilled zucchini & squash from the garden
Grilled potatoes & onions from the garden
Watermelon
 
Tonight I'm planning beans in barbecue sauce (with added onions and peppers) topped with cornmeal biscuits (a favourite at our house) and served with a big salad.

Hi all... sorry I have been so absent lately! We were in Vermont for 2 weeks to visit family, and have been crazy-busy since we returned. I have a few weeks of downtime now, till things get REALLY nuts in September, so hopefully I will get in a little more Dis-time. ;)

Tonight for dinner we are having Tuna salad sandwiches - tuna with mayo, chopped pickles, chopped hard-boiled eggs, and a dash of mustard - on leftover-from-this-weekend hamburger buns. To go with it we will have raw veggies - carrots, broccoli, etc - with ranch for dipping, a few slices of heavenly white cheddar cheese we brought back from Vermont, and some fresh fruit. Yummy, and NO cooking! :thumbsup2

Last night we had omelets, stuffed with hashbrowns, cheese, peppers and onions. Eggs- 1.39, hashbrowns - 1.00, cheese- .50, peppers-free from garden, onion-.10 We also had a box of lite sausage- 1.19 and english muffins-.75

$4.93 for a family of 4. Not bad!!
 
I'm making a knock-off of Outback Steakhouse's Alice Springs chicken using things from this past week's BOGO sales at Jewel! (Chicken, bacon, cheddar cheese, and monterey jack cheese.) What if I just use one package of everything, and then tell y'all I used the free ones, so dinner cost $0.00?:rotfl:

Ooohhh. I would love your recipe. This sounds delicious!

Tonight we had homemade vegetable soup and crusty bread(.50). I made the soup stock the other day when I was cooking chicken for a casserole. Then I added potatoes($2), carrots, green beans, corn($2 for all) and diced tomatoes(.50). So for a total of $5, we will get at least 3 meals out of it.
 
Tonight will be BBQ'd boneless skinless chicken breasts on the grill, mashed potatoes and gravy, mixed veggies (corn, carrots, and asparagus), and a nice fresh loaf of french bread.
