What's for dinner? Was it "budget"?

We bought a flip house so I'll be using some SUPER simple and easy meal ideas for a while as we need to go over there every night and work on it. (As if our schedule wasn't busy enough! :lmao: )

So tonight it's breakfast burritos (scrambled eggs, salsa, shredded cheese, sour cream in tortillas), chopped fruit, and canned cinnamon rolls per dh's request.

The eggs will take about 7 minutes to scramble, the rolls about 10 minutes, and that's it!
 
Leftover chili: $0
Leftover homemade bread: $0

Dessert: jello (.25) with whipped cream: 1/4 tub so .25

Total: .50 cents!!!
 
Just me tonight (BF is at traffic school) so I am having leftovers from dinner on Sat night - chicken parm. I also made a salad for myself (bag was 99 cents total). I will probably have the salad tomorrow with some mozz, strawberries and walnuts mixed in.
 

DS8 had first communion this weekend so we ate leftover ham, leftover potatoes and green beans. Ice cream cake for dessert. I've made ham sandwiches for all three of us for lunches and plan on making cheesy potato, ham and broccoli soup tomorrow.
Breakfasts are homemade cinnamon rolls (so inexpensive and much better than store bought canned) and now I know that I can get them ready and have them frozen so the freezer is my new friend.
Between the freezer and the crockpot I'm a happy mom. Whoever invented these---should be blessed!

Orange Chicken Sauce. . . no clue, guessing around $2
Rice: $0.50
Broccoli: $0.50
Drinks: $0.50

$7 total. . . not sure how many servings yet. . . at least 4, if not 6. . . .
 
Last night was Shake-n-Bake chicken breasts, a box of Stouffer's mac-n-cheese, and a bag of Steamers mixed veggies - corn, baby carrots, and asparagus tips. We tried the Garlic/Herb version of the Shake-n-Bake for the first time, and probably for the last. Bleck - didn't like it at all. I am not too thrilled with ANY of the Shake-n-Bake mixes, really... just thought I would give it a shot. But I think I will stick with my own homemade blend of flour/seasonings/breadcrumbs instead from now on.

Tonight we have having petite sirloin steaks on the grill, baked potatoes with butter and sour cream, and a veggie. Probably either corn or peas.
 
Last night we had pigs in a blanket (hebrew national dogs, with a slice of American cheese wrapped in crescent rolls), yellow squash cooked with onions and bacon, and baked beans. It was really good for a change. :)

I may have seafood ravioli tonight. It's lobster and crab. It was budget. Cost around $10 for two packages. It'll be interesting to see how well it goes over with the kids. DH didn't look too enthused to see it. I don't know if I'll like it either. Wondering if I should have an adventuresome dinner tonight or save it for another evening. :upsidedow :laughing:

I have to laugh because my friend and I always argue about this one. I call pigs in the blanket, hamburger rolled up in cabbage with tomato sauce around it. She calls them cabbage rolls and pancakes with sausage rolled up pigs in the blanket. Lots of different pigs in the blankets..

We had a vegan version of 'breakfast for dinner': scrambled tofu with onions, yellow peppers, mushrooms and broccoli, seasoned with a little curry powder and a dash of hot sauce. I made home fries to go with it (baked the potatoes in the microwave first, then cut them into cubes and browned them in olive oil while I was cooking the scrambled tofu and veggies) and added salad of spring mix greens with green peppers and celery. We all really liked it! And it was definitely budget - the tofu package was $2.49, mushrooms and yellow peppers were on sale, and the potatoes were $1.44 for ten pounds and I only used three.

tonight was Hamburger Helper:
cheap but not so healthy....but it had to be quick have a middle school concert to go to in 15 minutes.
 
No adventure tonight. :) We had fried chicken, potato planks, and pie. I bought it at the grocery store. The dinner was about $7. Nice and budgety. Then I blew it. The pie cost almost the same amount! :eek: :upsidedow What can I say? It spoke to me. I had to have it.
 
I had leftover orange chicken sauce and rice from the other night, so I grabbed three small chicken breasts and grilled them on my foreman and had the sauce on top of 1 1/2 of them. I still have enough for tomorrow.
 
We had Mcdonalds, not budget it cost 25.00 for the 5 of us. But it was ohhhh sooo good and I cheated on my diet:hug:
 
Last night was spaghetti with jarred sauce that dh added ground beef and mushrooms to.

Not sure what tonight will be. I have pork chops thawing so I'll have to come up with something to do with them.

Tonight is pasta night so we are having turkey meatballs, Trader Joe's cheese spaghetti sauce, whole wheat pasta, and mixed greens.

My strategy lately has been to add even more pasta, rice, beans and lentils, and whole grain meals to try to cut our grocery costs even more. I mean, we eat this way anyway, but even more so.
 
The grocery store was having a "12-hour Meat Sale" this morning. I got some fantastic deals. :cool1:

Picked up a very nice, lean piece of London Broil for only $5.80. As soon as I got home, I stuck it in the crock-pot with some finely diced garlic and some Au Jus. I will let that cook all day and then either thinly slice or shred the meat, slightly thicken the Au Jus, and serve it with some hot, crunchy, toasted French Bread for dipping. DD has requested baked potatoes (we didn't end up having them the other night, and she was disappointed) so I will probably make them tonight. I will also serve a salad; I picked up a bag of "Very Veggie" salad on sale ($2.00) this morning as well. Several different kinds of lettuce, carrots, radishes, snow peas, etc.
