What's for dinner? Was it "budget"?

Not super thrifty, but still pretty good!

:surfweb:Using up leftover meatballs and sauce... Add a bag of rolls (not for me - too many carbs. Disney will be here before I know it!) and provolone cheese - totals about $4, add a bag of Ceasar salad - about $3...
total Dinner for a family of 5 - $7 - less than $2 each! Not too shabby!
We will see what the rest of the week brings... :happytv:
 
well I cleand out the freezer so here we go

For those of you who dont want to look around this is how I make my pretzel crusted chicken. It was originally from Rachel Ray book but adapted for my pantry..

2 chicken breast cut into small chicken fingers.
2 eggs beaten with a little water in a shallow dish
3-4 handfuls of pretzels crushed and put into a shallow dish with a big dash of Mrs. Dash

Coat chicken in pretzel, then egg, then pretzel. Let sit for a few minutes to set up. I put them on a baking rack with a pan under to catch any fall-off. Put enough canola oil on the bottom of a frying pan to cover and add a few splashes of olive oil. Fry each side 2-3 minutes depending on how thick you made your chicken.

I also make a cheese dip..

1 tbsp. flour in 1 tbsp butter/margarine in a pot until combined and flour cooks out. Do not brown. Add one cup of milk and 1-2 cups cheese after thickened. I also put in 1tbsp. dijon mustard. (for the pretzels;))

My kids love this dinner but its is time consuming, so it is a Sunday meal...

Tonight is sloppy Joes, tater tots, green beans, and grapes. I know not the healthiest meal around but sometimes ya just gotta do it. :)

I need to look back through this thread because I'm starting to run out of ideas and I need inspiration again!
 

I am on WW, so I just made an english muffin (have 2 packs in freezer to use up), with a little bit of tomato sauce (in pantry, need to use up, will make ziti with leftover pasta and cheese) and some string cheese I am also trying to use up!

tonight in my house will probably be yo yo. I was hit with massive pain Friday night and while it's dissapated...my desire to cook has not come back :rotfl:
 
Just realized I posted my lunch before. For dinner, I just made chicken pot pie - using a frozen rotisserie chicken I had in the freezer, sauteed onion, some chicken stock, some white wine (I had a box of chardonnay left over from a ski trip..yes a box..classy, I know :), frozen peas and corn from the freezer, and carrots that are expiring on friday. For the crust, I just rolled out 2 leftover (frozen) pillsbury biscuits from that great deal at target awhile back. The crust doesn't cover the entire pie, but close enough.
 
Tonight I am tired (LONG weekend) and I have been doing laundry all day :laundy: ... so my enthusiasm for cooking is a bit lacking. I almost never use "boxed" or "prepared" foods, but I do keep a few on hand for nights like tonight.

I have a couple of lemon-pepper turkey tenderloins... I got a good deal on them, they were marked $2 off because they were nearing their sell-by date. I will bake those in the oven. I will serve a couple of bags of Lipton's noodles for a side... I think I have the parmesan flavored ones, with the green and white bi-colored pasta. Finally I will either find a bag of frozen veggies in the freezer, or open up a couple of cans of french-cut green beans.

Change of plans. I decided to use up some leftover chili so we're having chili cheese omelets, homemade blueberry muffins, and grapes. :cool1: Sloppy Joes will just have to wait until another day this week.

Never heard of that! Sounds interesting. I'll have to keep that one in mind!
 
We had Subway tonight, I had weigh in at weight watchers so we ate fast and easy tonight. It cost 21.00 for 3 foot long subs and a big bag of baked ruffles.. I am making low fat cake now, its in the oven and smells so good..:woohoo:
 
We're having beef stew from the crockpot. I'm not sure if it's budget, but here goes:

1.5lb of stew beef - 6.50
carrots - had in fridge maybe 25 cents (4 carrots from $1 bag)
potatos - from pantry maybe 25 cents
onion - from pantry about 30 cents
can of condensed tom. soup - 1.25
can of condensed beef stock - 1.34
1/2 cup of wine ???
noodles - had in pantry

Now that I think about it, we will get more than 3 meals out of this so I think it's pretty cost effective;)

For dessert I mad the best carrot cake from everything I had on hand. :banana:
 
Sizzlers are a quick cooking beef patty in between two very thin slices of ribeye.
Not exactly gourmet, LOL, but they are a great quick meal! ;)

sounds good...obviously I've never heard of them:rotfl:
 
Tonight is meatloaf (90% lean ground beef, $1.99/lb on sale), 2 twice baked potatoes from Market Day (only two left), and 2 regular baked potatoes, and some sort of green veggie from the freezer. So, probably like $6 for the 4 of us.
 
Hot and Sour soup tonight :)

Soup base $4.77 for 3 packets (vegetables are in the packets)
Approx. 3 lbs. boneless chicken thighs $5.69
4 eggs drizzled into the soup $0.66
Rolls $0.50

$11.62 total
 
Tonight is leftover night.. You can choose from Turkey soup or Chili...

For your side you will received salad from a bag..... We have 2 types of dressing left, a small amount of grated cheese, homemade croutons, onion, and well nothing else..That will clean out the fridge:cool1: :cool1:

Cost $0.00.... Time Saved not cooking and being able to Dis .... priceless:love:
