What's for dinner? Was it "budget"?

Very cheap tonight. . .

DH is having a frozen shrimp pasta dish we've had in there for a couple months. . . and he just found that there was chicken parmigiana in there too (he's thrilled). . . the in-laws paid for that meal when they came to visit so $0. . . and maybe $0.25 cents of green tea. . .

I'm not feeling well. . . I will probably just have one-two packs of instant oatmeal ($0.25-0.50) and some oj ($0.50). . .

so TOTAL - $1 to 1.25. . . pretty good in terms of cost, though this isn't a normal meal since I'm not feeling well. BUT we saved loads by thinking about what we have instead of DH just grabbing some take out on the way to his parent-teacher conferences tonight :)

Half Bag of Peas and Carrots .50cents
Gravy from Drippings Free ;)

Total $7.50

Had half of the chicken left over so I will make a chicken pot pie tommorow:

Dinner tonight was pretty cheap for us:

Leftover Frozen Ham from Christmas (free)
Large Bag of frozen mixed veggies (1.50, on sale)
White Rice (1.00)

Parfaits for dessert: .50 for fat free pudding (2 boxes), bananas (1.00), cool whip (1.00)

Total: $5.00 for dinner for 2 adults, 1 child plus dessert..and enough for a lunch tomorrow!
 
We had breakfast for dinner...homemade pancakes (flour, milk, eggs, etc...most expensive part of this was the 2 cups of milk!) and brown and serve sausages ($1...got them on a 10 for $10 sale)...

We haven't had this for a while...kids love it!
 

Since I just got a call from DH asking me to pick up DS from school, I guess it'll have to be something really fast and easy tonite.

Pre-cooked frozen meatballs, BBQ sauce, simmer on low while I'm in the shower.

If there's any potato buds left, we're having it, if not, put on a pot of rice, again while I'm in the shower.

Steam some carrots when I get out of the bath.

We're good to go. And I have lunch for tomorrow! :)
 
I've got country style pork ribs in the crockpot. I bought a big package at BJ's and divided and froze. I think they were $1.69/lb. I bought "designer" bbq sauce this time around instead of the usual 99c Kraft sauce. I think it was $2 a bottle.


How do you cook the ribs in the crockpot? Do you cook from frozen, or do you thaw and cook? DH wants ribs for Sunday... Thanks!
 
Well tonight was very cheap since I did not feel like going to the store.:rolleyes1 I had turkey breast left over from last night(but not enough to make a meal), lettuce, tomatoes, and cheese(left over from tacos) and 3/4 pack of bacon(left over from black eyed peas). So DH had turkey sandwich and a BLT, he will have a salad when I make it too:rolleyes1 , DD had half a BLT and spaghettiO's with franks:sad2: (I know not ery healthy but she LOVES it and does not get it often...) I get what ever is left...LOL but it was easy and everyone is happy!!:thumbsup2 :cool1:

We do this, too, but tonight was stirfry night. :) I sauteed chicken breasts in olive oil with broccoli, green onions, and carrots with soy sauce, low salt hoisin sauce, and pepper. We had it with brown rice and hot tea.

Tomorrow is soup night so I will probably make some Cantonese style chicken and long rice. This is chicken, vermicelli noodles, and chicken broth seasoned with garlic and grated ginger. Side dish will be cooked frozen veggies with a basic teriyaki-type sauce.

Mine were partly (OK, mostly) frozen. I did nuke them for a couple of minutes so I could get them into pieces, but they were definitely frozen inside. I don't know if I mentioned this in my previous post, but my ribs were boneless. I use a recipe from Fix It and Forget It cookbook...you make a spice rub from dried minced onion, cinnamon, salt, garlic powder, and crushed red pepper flakes. You rub this into the ribs, put them in the crockpot with sliced onion, and a little water (about 1/2 cup). Cook on low 8-9 hours. The last hour, you drain the cooking liquid, and coat each rib with BBQ sauce (I use a lot, we like ours saucy). They come out really good...basically just fall apart. I like this recipe because you put the bbq sauce in at the end. When I cook them in the sauce all day, the sauce gets too watery.

Tonight is soup night for us too. I think I'm making hamburger soup. Pulled the recipe off of Allrecipes. It got 5 stars, and I have all of the ingredients on hand, so it sounds like a good idea to me!! This will last the weekend, but I'll probably freeze some for another time.
 
Tonight is leftovers. So definitely Budget.
 
Today I've got chili cooking in the crockpot. It's budget, tasty and hopefully the "spicy" will get this baby here! I'm also making beer bread that I bought a while back from a Tastefully Simple party.
 
Pizza tonight!

I'm using my last $2.50, Red Barron thin crust 4 cheese pizza. I'll add about $1.50- $2.00 worth of pepperoni and it'll be great! I hope those pizzas go on sale again! I still can't believe they went up from $2.50 to $4.00 in one week!!! Yikes!

I'll be looking at the sale supplements this weekend! :upsidedow
 
Last week I bought a family sized packaged of ground beef - the 97/3 (leanest kind). . . I split it into 3. Made two meatloaf's (cooked one, the other is in the freezer) and mixed the other 1/3 into meatballs. . .

SO, today I put the frozen meatballs into the crock pot ($4)
1/2 a BIG jar of ragu ($1)
and I will make spaghetti to go with it ($1)
Frozen broccoli ($0.33)
our drinks (0.50)

TOTAL: $6.83 - for about 4+ adult servings (dinner and lunch for two)
 
Tonight is a little over budget but for good reason. My daughter is going to her Date dance and my 12yo son in going to his first formal dance tonight. (He has to wear a suit.) Luckily they are at the same hall.. Isn't strange how some things just work out.. because we are under about 4 inches of ice at our house... I got off subject:lmao:

Went to Sam's and bought a precooked chicken $5.00
Made 2 homemade loaves of french bread $.50
1 package of 6 little applesauces $1.75
No veggies (they can hit the veggies at the dances.. Yeah right keep dreaming mom:angel:)

So $7.25 and they can pick and have what they want whenever. DH and I will probably eat while taking turns driving. Everyone in the bad weather zone, stay warm and stay safe tonight. Diane:flower3:

Plenty of leftover beans and rice for lunches


Tonight:
From the freezer: Leftover turkey and dressing from Thanksgiving made into a turkey pot pie with cornbread dressing crust. No idea of the cost.
Sweet potatoes (free from farmer friend)
Biscuits (made from bulk purchased baking goods from pantry, again no idea)
Rest of the bagged salad w/ homemade apple cider vinagrette and chopped apples and pecans $1.25 for the salad. I'm guessing another $1 for the apple and dressing. The pecans were free.

I bulk purchase baking suppplies like white flour, whole wheat flour, corn meal, baking powder, powdered milk, etc. and store them in the deep freeze. I'm afraid I haven't kept track of the cost of these items since I started this more out of convenience than to save $$. I also buy white rice in bulk when it's on sale. I prefer to use brown but hubby and DD don't care for brown rice and last night was their good-bye dinner before they left on their ski trip.

:surfweb: Beef stew for us, too! So easy as most of ingredients were alreday on hand - Onion, carrots, the last ribof celery and beef broth, jiffy mix, too. No potatoes left, so DH will just have to deal with it. Maybe il'll add some pasta/noodles of some sort... I had picked up a 1.09lb pack of stew meat earlier in the week - $4.13. Brown the meat,add the veggies, spices, broth and water. Simmer for few hours and wooo - la! Dinner! :thumbsup2 No take out, everyone is happy - $35 saved! The weather is crappy, snowing lke a son of a gun, :scared: and its a geat excuse not to spend $35+ on take out. Especially when the superbowl is on sunday - I will save my money for that!! :cheer2: GO PATRIOTS!:cheer2:
 
Tonight I mixed the leftover shredded chicken from last night's taco chicken (which turned out amazing!) with some bbq sauce to make shredded bbq chicken.
Today in my grocery run I picked up crusty sandwich rolls.

Dinner turned out super budget and super yummy!

we will eat about half of the chicken and use the other part tomorrow night so for less than $7 we have a nice relatively easy dinner...Fridays are a bit of a rush as we have small group at our church a half hour away from home so I always feel rushed with just about a half hour to cook and eat something.
 
Tonight I have some leftover chicken I am going to re-heat and use up. ($0)Along with it I will cook up some frozen tortellini ($3) and add a jar of Alfredo sauce I have in the pantry ($0). Will toast some French bread ($1).
I also am planning a salad... a bag of mixed lettuce salad with shredded carrots ($2) with ceasar dressing ($2.50) and croutons. People could shred the leftover chicken and add it to their salads, if they wanted to.

So, about $8.50 for 5 people for supper, not counting the things I already had in the fridge or pantry. Pretty good sales at the grocery store today! :thumbsup2
