What's for dinner? Was it "budget"?

Last night we had football food -- healthy version ;)

Turkey burgers (mixed with mushrooms, carrots and onions that had been sauteed with marsala) $5.50 for 3 servings

Half Bag of french fries: 1.25

so $6.75 total or $2.25/per serving
 
Yeah, last night was Super Bowl football food in my house too... but mine wasn't healthy, OR cheap... I was at work, DH fixed dinner... I was tired and hungry and looked the other way...LOL

He did ribs on the BBQ... a huge rack of beef and another rack of pork ribs. Slow-cooked them for about 7 hours... LOTS of BBQ sauce... REALLY yummy. He also made his specialty cole slaw... loaded with fat and salt... but hey... there's veggies in there!! :confused3 A box of cheese pierogies rounded out this heart-attack-on-a-plate. :rotfl:

Tonight mom is cooking again... back to the at-least-semi-healthy food.

I would love to know what is in his coleslaw....we like some coleslaws and I would love to find one I can make at home that we would eat. Not often of course!!:angel:
 
He actually got his recipe from one of those copycat sites... I think it is a copycat of KFC's coleslaw.

Basically you chop your cabbage and carrots as fine as you like them. Sometimes we are in the mood for big chunks, but usually we cheat and buy one of those bags of already shredded coleslaw mix from the bagged salads area. Then you mix in some Miracle Whip salad dressing until it is a dressing-y as you would like it. Then season to taste with garlic and onion powders and pepper.

I have one more coleslaw recipe we use sometimes, but it has a lot more ingredients. DH is a big fan of EASY, so he prefers to make the Miracle Whip recipe... MEN!! LOL

8 cups finely chopped cabbage (about 1 head)
1/4 cup shredded carrot (1 medium carrot)
2 tablespoons minced onion
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice

1. Be sure cabbage and carrots are chopped up into very fine pieces (about
the size of rice).

2. Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar,
and lemon juice in a large bowl and beat until smooth.

3. Add the cabbage, carrots, and onion, and mix well.

4. Cover and refrigerate for at least 2 hours before serving.

I've been sitting here thinking I bet you know of some of my husband's family...they are all over MT. We lived in Billings for 12 years but his dad is one of 18 and they all had big families too.

One day my husband was talking to somebody and after they stopped I asked him why he didn't introduce us...he said I know it's a cousin I just have no clue which one:rotfl:
 
A double batch to feed us at least two nights and me two lunches. :cool1: Everything is coming from the pantry/freezer. If I get home early enough, we're having coffee cake too! :woohoo:
 
Tonight it's sliced steak sandwiches w/mustard-mayo sauce & carmelized onion. Salad on the side.

Steak - 3.00
Crusty Italian Bread 1.50
Onion - out of fridge/maybe 50 cents
Salad - 1/2 of bag at $2.50 a bag - so 1.25

Feeds two. Kids had pasta and garlic bread. Had on hand.

I really like all the creative ways everyone is using up their Superbowl food! Unfortunately...I only made hot wings, and they were all eaten...so no leftovers!

Tonight was Tuna and Noodles

1 can albacore tuna in water $1.29
1 package of egg noodles $.89
2 cans cream of mushroom soup $.50 X 2 + $1.00
1 package frozen baby peas $.89
1 cup milk ???
2 scallions ???
4 slices of American Cheese (for the bottom of each bowl) maybe .40??

Pretty cheap dinner served up with a salad!!! Tasty too...my husband HATED tuna until I made him try this.....
Dessert is a a bunch of recycled blueberry muffins turned into a lemon-berry bread pudding...YUMMY....
 
Beef Ravioli ($4.50)
Ragu ($1)
Creamed Spinach ($1.50)

TOTAL: $7, two adult dinners, one adult lunch (so, $2.33 a serving)
 
Tonight we are having boiled beans, brown rice, and Cantonese-style chicken.

Speaking of copycat recipes, I made the Panda Express chicken recently and it tasted very similar. Sooo much cheaper. :thumbsup2

I will be making blueberry sorbet later on for tomorrow.... and 4 batches of homemade desserts that I am donating to my oldest dd's Valentine's Day school bash.
 
And we'll freeze a bunch for another night!

small chopped onion
1 lb. lean ground beef or ground turkey (I got mine buy 1 get 2 free, so pretty cheap!)
2 14 oz. cans diced tomatoes
1 can diced tomatoes with green chilis
1 small can sliced black olives
1 can corn
2 cans pink kidney beans (I used 1 can pink kidney, 1 can black beans)
1 packet taco seasoning
1 packet dry ranch mix
water - as needed


Saute onion and ground beef/turkey. Add tomatoes, olives, corn, beans, taco seasoning & ranch mix. Add water until it's the consistency you prefer (soup vs. chili consistency....more water will stretch it further of course). Simmer for a few hours.

Can serve with some nacho/frito chips and a little sour cream if desired. Otherwise it's pretty low fat (if you use lean beef or turkey). This makes a BIG pot of soup and it's tasty!!!

Couldn't begin to tell you how much $/serving, but it makes so much...has to be cheap!

$6.00 fed 4 people and we have leftovers

Any family in Kalispell/Whitefish/Columbia Falls or the surrounding areas? I am originally from Missoula, but haven't lived there since I was really tiny so don't know anyone in that neck o'the woods. ;)
 
Tonight was leftovers night:
DS 12 had leftover KFC chicken and EZ Mac (he ate before us because he had to play in the Pep Band for the basketball game tonight)
DS8 had leftover KFC and salad

DH and I had leftover sausage and peppers and cheese ravioli that I had frozen a few weeks a go, and salad.

Moving on to tomorrow....who knows!:rotfl:

Tonight was taco night. I am also on the use up your cupboard thread so I used food that was all in the house.. So I am gonna guess on prices..

1 #ground beef $1.99
1/2 package hard shells .50
1/2 pagage soft shells .50
seasoning .25
refried beans .75
cheese, lettuce, salsa, sour cream, taco sauce $1.00

Side dish Basmati rice made with lowfat beef broth then salsa stirred in: $1.00

Dinner total $5.99. 4 ate dinner w/ 3 lunches leftover.
 
Tonight was pot roast, veggies and rice. We had tons left over.

3lb. sirloin tip roast $6
carrots .50 cents
onion .75 cents
celery .75 cents
2 can low fat cream of mushroom $1.75
rice .25
Total = $10, but we have enough for another meal.

$15.44 ~ seems like a lot for tacos but that will feed all 6 of us with some leftover for lunch tomorrow.

I'm also going to make a couple of truffle pies because Kroger had the main ingredients on sale yesterday. So add on a total of $4.74 for both pies and that will give us dessert for today and tomorrow. :)
