What's for dinner tonight?

I am making what my husband calls "Kitty Kitten (me) Kinky Spaghetti and Meatballs." It is awesome!! I stole it from 30 minute meals. Here's the recipe:

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 carrot, peeled and chopped into a small dice
1 medium yellow skinned onion, chopped
2 small ribs celery from the heart, chopped
3 cloves garlic, chopped
3 cups tomato sauce or 1 (14-ounce) can plus 1 (8-ounce) can
3 cups chicken stock, available in a box on the soup aisle
1 pound ground beef, pork and veal mix (meatloaf mix) available at butcher counter
1/2 cup grated cheese, Parmigiano or Romano, plus more to pass at table
1/2 cup Italian bread crumbs, a few handfuls
1 large egg, beaten
2 tablespoons chopped parsley leaves
1/2 pound spaghetti, broken in half
1 cup basil leaves, torn or shredded
1 loaf Italian crusty bread, for dunking

Preheat a medium soup pot over medium heat. Add extra-virgin olive oil, 2 turns of the pan, carrots, onions, celery, garlic and saute 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil.

While soup comes to a boil, mix the ground meat with cheese, bread crumbs, egg and parsley. Roll into 1 1/2 to 2-inch balls.

Remove lid from soup and slide balls into soup. Bring back to a boil then stir in spaghetti. Reduce the heat and simmer soup 10 minutes more, until pasta is tender and balls have cooked through. Stir in basil and remove "stoup" from the stove. Serve soup with bread and cheese.


I add some mushrooms instead of celery :)
 
We're having a bbq chicken casserole - has a layer of cheese and hashbrown potatos on bottom and then chicken with bbq sauce on top. Very yummy, very easy, very cheap. =)

I'll probably make a green veggie to go with it.
 

I have a freezer full of great stuff to bake, you know, in an oven? I almost forgot what an oven is this summer. It was so cool last night that I decided I would bake a corned beef brisket and have mashed tatoes and broccoli or something. It is September 27, right?

I look at the forcast, and they say it will be 80 degrees out. Would someone please notify God that I would like to use my oven? I'm gonna be a rebel and do it anyway!
 
You all have such great ideas for dinner.....now I'm sitting here depressed as I don't have a clue as to what to fix......all I want to do right now is go home and take a nap.......Can someone send me their leftovers?

I have never heard of sweet potatoes in a pot roast....only white potatoes here.....doesn't that make the whole meal.....sweet????? Not knocking but I just could not imagine roast (meat) being sweet or eating sweet potatoes in it!!! Is that a regional thing or am I the last person on the face of the earth to have ever heard of such a thing???

I can tell you , I LOVE potatoes... in every single form.... and yes, I know what you mean about using white potatoes.... but I got this from a friend a few years back....substitute with sweet potatoes... it offers a bit of a nice change.. also make gravy with the juices from the meat...yummy...I have to say it does not make the whole meal sweet....its a nice change from the regular
meat & potato dish.

It's 91 degrees outside, but about 65 inside.

Tonight's menu:

*Stir fry with chicken, peppers, onions, and pinaepple in a sweet and sour sauce,

*biscuits

*and blueberry cobbler for dessert.
 
There was a recipe in our food section of the paper today that used sweet potatoes in the pot roast but I thought it was a mis-print!!!Hmmmmmmm I don't know if I could ever be adventurous enough to try it ..........I might run it by my dh to see what he thinks but I don't like sweet potatoes in the first place so I guess that is what is really making me gag!! LOL!!!!!!
 
I'm making a meal off of Rachel Ray's 30 min. meal: Mac n cheese with chicken and broc. I hope it turns out OK. Never made Mac n Cheese from scratch before.

It's Dottie's Creamy Steak Soup on page 36. It probably doesn't help you for tonight though. Maybe tomorrow!

(For what it's worth, I use Campbell's Healthy Choice Cream of Chicken instead of the Cream of Mushroom, and I use ground turkey breast in place of the ground beef. I also omit the potatoes so that I can serve it over mashed potatoes for the kids and brown rice for DH and I.)
 
well, since I ACCIDENTALLY left my freezer open a little yesterday, and my meat starting defrosting (OY), I have to make that up. Thinking tonight will be spaghetti and meatballs with bread. Or else some Hamburger Helper. Gota bit of running around to do and AR DOES start tonight. hmm...

All your meals sound SOO good...
 
I posted this morning that I was going to go take the chicken out of the freezer.
Well, I forgot.
So now I don't know what I am making for supper in 3 hours!! :teeth:
 
Ds age 5 is having Gnocchi and romaine salad. and chicken nuggetts.
Ds age 5 number 2 is having roast chicken, rice and sliced peach.
Ds age 11 is having, Bagel bites frozen pizzas.

As for me I am a vegatarian but, for some odd reason am having a cheeseburger and a tomato salad.
