Tonight I am making crockpot cheesy chicken pasta and Extra-special Kitty Bread.

WFD at your house?

I haven't heard an update on the love birds lately - are things mended between y'all? Is their wedding stilll a go?
Thankfully they broke up in early March, but things never got resolved between us. Unfortunately Scott still has to work with her and he absolutely hates it.

We discovered that Robin is a bit of a sociopath. No kidding and not exaggerating.

Ya think? Just the little incidents you shared did not make for a promising future for your BIL. It's a good thing that he saw it before they married.

You know the big stink though? Kevin was so happy when they were together and such a joy to be around. He truly became one of my closest friends. Now he's back to the same old have-to-one-up-everything-you-say, know-it-all Kevin. Blech. Oh well. You win some, you lose some. :lmao:

We are having meatloaf, mashed potatoes, peas and corn. My boys will be happy, this is one of their favs...mine too!

Well, last nights dinner stunk! I diverted from our new favorite, Kathy's Cajun Pork, and it was just not as good. A and I ate it. Tom absolutely hated it. Ya live and ya learn, right?

OH SURE. You ask for the chickpea recipe. My reputation for cooking prowess is coming to an end here.

Ready?



1 can chickpeas, rinsed and drained
1/2 cup purchased green olive tapenade
1 shallot, minced
a handful of parsely, chopped

Stir everything together. Eat.

It seems many of you were inspired to fire up the old grill this weekend.
We did too...

Saturday we grilled brats (I like mine good and charred)
Sunday we grilled our famous Jerk Chicken and Pineapple slices to make sammies on sourdough bread. Delish!

Tonight I'm making Chicken Parmesan and Garlic Bread.

Sunday DH and I leave for our anniversary trip to the Smokey Mountains.
We have never been - and we have rented a cabin. I can't wait!
We've packed some wine and some bathing suits for the hot tub.
That's just about the plan for the whole week! :thumbsup2
I have Got to finish packing - I typically am fully packed and ready to go by this close to a trip. :rotfl:

Tonight we are having beef stew and biscuits (thanks for finding the recipe for me Hersey). I think we we also have a salad, depends what the produce looks like at the store. I hope everyone else is having a beautiful spring day like we are.

It's just sharp cheddar cheese, montery jack, and milk. Butter, salt and pepper, and a little bit of hot sauce.

Nancy, here is the recipe for the cannelini beans:

1 can cannelini beans, rinsed and rained
1 shallot minced
a handful of parsely, chopped
salt and pepper to taste
about 2 tsp. red wine vinegar
1-2 tbsp. olive oil

Combine everything. It tastes best if you can let it sit for a while before serving.
 
Hi everyone! I kinda disappeared for a while. The boys were out for Spring Break and we took them to the beach, then I played catch up at work for a week. Anyway, we are back on schedule and tonight's dinner is Key West Chicken, Rice, and a salad. We have our annual island trek in 3 months and I've got a little weight I'm trying to loose, so it's all healthy eating until then.

Sure it's simple. Mainly a marinade. I usually double all ingredients except the soy sauce and baste while grilling.


Key West Chicken
3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 chicken breasts
 
Yikes! I can't believe they would ban you for no justifiable reason. Maybe it was a mistake? Or a glitch? Hope they get it fixed soon!

Hey Y'all,

No cooking this weekend. We had take-out fried seafood on Friday. Had our neice's communion on Saturday & spent the day over there. It was nice. Yesterday I wasn't feeling well, so DH went pickup Outback!

Wendie, Glad you have things worked out for your Grams! Bob & I are considering getting some in home help right now. I've really been hurting & having a hard time moving him around. He checked again though & there isn't any program that would help financially with that. We are still considering it though. It's scary stuff.. Hugs for you :hug: & your Dad.:hug: It must be hard not living closer to him. Glad he'll be with you soon!

Becky, Antipasto????!!!! :eek: :lmao: I really don't think that huge spread can be called Antipasto! :rotfl: Looks totally scrumptious though. Love the idea with the chickpeas & cannelinni beans! And the meat flower is too pretty. Was that endive? What a nice spread that would make for a party!

Tonight for dinner, I'm thinking either white beans, butter beans or arroz con pollo. Wierd huh, the thing is I would like arroz con pollo but Bob hasn't gotten his Monday beans in weeks! And I know what his choice will be. And beans are easier.

Lindsay -- That is very strange. I hope it gets resolved soon.

Becky and I must have both been thinking about Summer Shack yesterday because my dinner also included the spicy slaw. I also made fried calamari, fried clams and beer-battered cod. The house smells like a fish shack. It was good though.

Tonight we are having leftovers from the giant antipasto feast. Caili has skating, so that will be an easy meal once we get home.
