Kat, How was it last night?

It was very nice but long......there were two guest speakers and about 10 kids who were being honored for various sports as the athletes of the months for Feb, March & April.

Of course Kyle had me in tears during his acceptance speech. He thanked his coaches, teammates, his Dad & God, then he stopped and paused. He kinda teared up and looked directly at me and said "I thank my Mom the most. If you look up the word dedicated in the dictionary you would see my Mom. She has dedicated the past 17 years of her life exclusively to me and I love you so much Mom".....I LOST IT......:sad1:

Glynis- I am so very sorry for your loss. I remember when you spoke about Carissa and was sad that such a vibrant young woman was ill. Please know that my prayers are offered for all of you. :grouphug:

I am such a emotional sap... I filled up reading this too! You did good Mom, that boy is going to go far in life and make you very proud!

I am not able to keep up with this chatty bunch but I'll give it a try.

Kat- Oh my gosh, your son has me teary today. What a wonderful tribute to his Mom! You have certainly done a wonderful job raising him.

I remember when my Dan was graduating from HS. He was President of the FFA and "hosted" the awards ceremony. He also mentioned me....."I want to thank my Mom, she's the one who is crying at that table" :dance3:.

Sheryl- I don't know if this matters but last year Kady had a lot of pain and would not urinate. She said that she hurt. She really could not say where the pain was coming from so I took her to her pediatrician. He ran all of the tests and they all came back negative but he told me to buy an antifungal cream and use it on her twice a day. He also said to "soak" her in the tub because it would help her. Anyway the pain went away soon after we used the cream. She also had an accident, she never even felt that she needed to go, I think that she had been in so much pain earlier that she could not distinguish what the pressure was. Keeping her in my prayers.

Wendie- Your GM may not be happy with the call but you are right in doing what you need to do to keep her protected. It is easy for people to become complacent about their responsibilities when they are comfortable with the people who they care for but the elderly are so vulnerable, the opposite should be true.

Lauren- I hope, I hope, I hope.......:hug:

LaurieG- It is so good to have you back.

Piglet- I remember you and am glad that you are back.

I am not sure about dinner tonight. I need to see if Dan is joining us for dinner. If he is I'll make a new meal, but if not I think we'll have leftovers.

I'm sure I'm missing people but I only have a minute before I have to (sigh) do some work.

Here is a picture of last night's dinner--Zuni Cafe Roast Chicken. This is one of my favorite ways to serve roast chicken. I think I posted the recipe in the old thread.

Here is Becky's Recipe. This was easy to find...it was on pg 31! ;)

Zuni Cafe Roast Chicken and Bread Salad

For the chicken:

1 chicken, about 3 1/2 lbs.
salt.

1-3 days prior to serving, rinse the chicken, discard the giblets and remove any extra fat. Dry very thoroughly. Season the chicken very liberally with the salt--about 3/4 tsp. per pound. Cover loosely and refrigerate 1-3 days.

When you are ready to cook, preheat the oven to 450. Preheat a flameproof roasting pan or skillet over medium heat. Wipe the chicken dry, brushing off any visible salt, and place breast up in the pan.

Roast in the center of the oven for 30 minutes, then flip the bird over. Roast for 20 minutes longer, than flip back over to recrisp the breast skin, 5-10 minutes longer. At this point, check to see if it is cooked. If yes, tip any juices inside the chicken back into your cooking skillet and set the chicken aside to rest. If not, keep cooking til it's done!

While the chicken is roasting, you can make the salad:

For the salad:

1 tbsp. dried currants
1 tsp. red wine vinegar
1 tbsp. warm water
8 ounces crusty peasant bread (not sourdough though), bottom crust trimmed
6-8 tbsp. olive oil
1 1/2 tbsp. white wine vinegar
2 tbsp. pine nuts
2 cloves garlic, thinly sliced
1/4 cup thinly sliced scallions
2 tbsp. salted water
a few handfuls of salad greens (I use arugula)

Place the currants in a small bowl with the red wine vinegar and the warm water, and set aside.

Cut the bread into large chunks and brush with olive oil. Broil or toast to get it a little crisp, then tear into smaller edible sized chunks. Toast the pine nuts lightly at the same time you prepare the bread, then toss them together in an oven proof bowl or dish.

Combine 1/4 cup olive oil with the white wine vinegar and salt and pepper to taste. Set aside.

Heat 1 tbsp. olive oil in a small skillet, add the garlic and scallions, cook until just soft then add to the bread. Drain the currants and add them in. Add in the warm water and toss everything together.

Cover the bread salad with foil, and place it in the oven 10 minutes before your chicken is done.

While the chicken rests, defat the pan juices in your skillet, then bring to a simmer. Take the bread from the oven and place in a salad bowl. Drizzle the pan juices over, add some of the olive oil/white wine vinegar mix to taste, then toss in the greens.

Serve the chicken, cut into serving pieces, nestled in the bread salad.

It looks like a long recipe, but it only takes an hour, and it's really good!
 
Becky, that chicken looks amazing! I hope you do not mind that I post the recipe. QUESTION: I do not know if I like currants...can they be subbed with raisins or cranberries?

I have no idea what to do about dinner tonight. I forgot to take anything out of the freezer and I have sooooooo much to do I think I may just pick something up.

It's really good stuff, I got it from Costco and it is low fat too.

You could definitely substitute either one.

Becky and I have used wonton wrappers for ravioli before, and we've concluded that the texture is wrong. However, if you fry the ravioli (I've also made pierogies) in butter after boiling, they taste better.

I picked up popcorn chicken and a java chiller from Sonic on my way home from church. Their popcorn chicken is really good - real chicken and no slimy chewy parts.

Good Morning All,

Haven't been here in a while and wanted to check in. If I tried to fill you in I would use uo 100 pages on my own!. Last night was marinated steak don't rememebr the exact recipe now but can post it later, it had Ginger, garlic onion, soy, honey. Summer squash and zucchini on the grill brushed with Italian dressing and a grilled onion hollow out the middle add beef bullion and butter, wrap in foil place on grill 350 for 45min-1 hour.
Tonight is Burgers and Broccoli Salad. Broccoli, Bacon, Onion, Grapes, Mayo, Sugar, vinager.
Can you tell spring has FINALLY hit NH!

Lucky you! I wish spring would hit us here! We had a light snowstorm yesterday! Not enough to stick, but enough to make us depressed!
