What's for Dinner Tonight? (recipe index in OP)

Nancy - As I was making dinner last night, I realized that I should have invited you and Buddy to dinner! We had yummy herbed tuna sandwiches. I jazzed up regular tuna/mayo mix with a couple of hard boiled eggs, some chopped chives, parsley and basil and a few shakes of onion powder. Then I broiled the sandwiches with slices of cheddar on top. My kids thought they'd died and gone to heaven. Why is is that sometimes the simplest dishes taste the best??

Dinner tonight will be stuffed southwest turkey burgers. Maybe I'll make Nita's corn salad to go on the side. Yummo!!!
 

Just when I think things can't get worse - they do. When I left for work this morning my dog Sammie was trembling. I called a friend to go and check on her for me mid-morning. She found her lying on the floor as stiff as a board and she'd thrown up. If any of you have a prayer to spare for my girl please do. My friend brought her to the vet and they are checking her out now. She's an old gal but I really need her to get through this.:sad1:

That tuna sandwich sounds amazing!!! i might need to make that one this weekend !! yum!

WFD tonight: what i was supposed to do yesterday..but we went to chilis instead ;) lol....grilled chicken breast marinated with our herbs, salad, zuchinni and garlic bread on the side..just for fun ! haha.

Sheryl, Thanks for the AC filter info! Yeah, the bread is good but even better with the sugar and raisins.

I also made a pot of lentil soup with the ham bone from Easter...it is soooo good.

Well, I am still cleaning this mess. It will only be a mess next week when then tape and mud so I am not going too crazy but it still needs to be done...

Kat--:hug: Please know that sweet Sammie is in my prayers and you are as well. I am so sorry, this is the last thing you need right now. I am here for you!! Keep us posted.

Ross just came in from school, so I just have a minute to post. I was going to catch up earlier, but my bestfriend called and her kids are sick, and she needed me to run and get some ginger ale etc for them, so I spent my spare time helping her out. (we live 20 min from each other, so it is time consuming but I would do anything for her and the kiddos and I know it works both ways)

We have a karate seminar tonight so a quick supper is in order. Ross just wants grilled cheese and bacon with cukes.

I will check back in later tonight hopefully to good news on Sammie!
 
Just got back from the vet, they let me spend about an hour with her. They had to give her some valium because what happened this morning was a seizure and she'd already had another one by the time i got to the vet's office. The blood work showed some problems with her liver and her thyroid. Whether or not she can be treated depends on how this afternoon goes. If she continues to have seizures this afternoon, due to her age, they suggest we put her down. My heart is just breaking.:sad1:
 
I have had that same Heart.

It's agony.

I pray she recovers to see more time with those she loves and love her back.:grouphug:
 
Kathy, I'm so sorry about Sammie. I hope she will be all right. :hug: I can totally relate - our Chewie is 15 and I know any day that something might happen.
 
I just got a call from the vet and they want us to come and pick her up and bring her home because they don't want her left alone in the clinic overnight. She hasn't had another seizure so far, hopefully they will put me in touch with an emergency pet clinic should I need one. I can guarantee you Mom will be by her side all evening and all night. I'm really not sure what the prognosis is at this point but I want to thank you all for the prayers and good thoughts, keep them coming.:grouphug:

Sure. Here you go:

Southwest Stuffed Burgers

1 1/2 pounds ground turkey
1/4 C. light mayonnaise, divided
1 pkg. taco seasoning mix
1/2 C. colby/jack crumbles
1/4 C. salsa, divided
6 lettuce leaves
6 slices tomato
6 whole wheat hamburger buns, split

Preheat greased grill to medium-high heat. Mix meat, 3 tablespoons of the mayonnaise and the seasoning mix; shape into 12 thin patties. Combine cheese and 2 tablespoons of the salsa; spoon over 6 of the patties. Cover each with one of the remaining patties; pinch edges together to seal. Grill 7 minutes on each side or until cooked through. Meanwhile, combine remaining 2 tablespoons of salsa and remaining 1 tablespoon mayonnaise. Place lettuce, tomatoes and burgers on bottom halves of buns; top with the salsa mixture. Cover with tops of buns.
