1/2 lb. Rigatoni, cooked al dente I used penne, no rigatoni in pantry

5 Italian Sausage links, removed from casing

2 garlic cloves thinly sliced We love garlic in our house so I used 3 cloves

1 1/2 cups marinara Didn't have quite that much so I added approx. 1/2 can of tomoato puree

1/2 tsp. crushed red pepper flakes

1/4 cup grated mozzerella I used more like 3/4 cup then sprinkled more on top

1 tsp. chopped Italian parsleyOmitted, didn't have any

Extra Virgin Olive Oil Again big garlic lovers here so I used roasted garlic olive oil

Crumble and cook sausage in heavy pot until no longer pink. Add garlic and saute until soft. Drain off excess oil and return pot to medium high heat. Add Marinara, crushed red pepper flakes, then pasta. Season to taste with salt & pepper. Add Mozzerella and stir well. Pour mixture into a large casserole dish and sprinkle remaining cheese on top. Place under broiler until cheese on top is melted.

I meant to add, the recipe doesn't call for seasoning the actual meat before mixing. I would add a pinch of salt and pepper. It needed a little sprinkle at the table.

I have all my ingrediants ready to go for dinner tonight...I will let you know how I make out!

WFD- with the meatloaf, mashed, peas, and gravy.

This makes a ton, but the longer it sits the better it tastes. It's also really good as a topper for grilled fish and chicken.


2 cans whole kernel corn, drained

1 can Rotel with chiles, drained

1 Jalapeno diced

Mixture of chopped green, red, and orange bell pepper My grocery store sells a mixure of all prechopped that I use

1 red onion diced

1 handful of cilantro chopped

1 bottle zesty Italian salad dressing.


Mix all together. I never use a whole bottle of dressing. Just use your own judgement. I've also added black beans to it before, 1 can drained and rinsed. My boys don't like them though so I rarely add them.

I marinate and baste. I just remove part of the marinade before I add the chops. I'll marinate them for a couple hours then baste them as I grill.

Dinner last night was Texas Road House. It was okay. I didn't know we were going to have dinner out, DH had an appointment and I really expected coffee, so there I was in my wind pants and Minnie Mouse tee shirt :eek:, feeling a little odd. Two glasses of merlot and I wasn't thinking at all so I guess it was okay.

No cooking tonight. I need to take Kady to an after school program and won't have time to cook. Leftovers I think will do.

SO....I finally did make the soup and shrimp I had been trying to make all week! The soup was SO yummy. We ended up just eating the soup and not any of the shrimp! So, tonight I have the shrimp dish leftover. It was shrimp with sauteed leeks, and green beans, asparagus, and peas, in a thyme butter sauce. I think I am going to puree the vegetables into a soup and then top with some of the shrimp. I'll make the rest of the shrimp into shrimp toasts.

The soup recipe was so easy and yummy that I am going to post it even though nooone has asked for it yet!

Smooth and Creamy Green Pea Soup (adapted from the Boston Globe Sunday magazine)

2 tbsp. butter
1 large leek, white and pale green parts only, rinsed well and sliced
2 tbsp. flour
2 cups chicken stock
1/2 cup water
1 lb. frozen peas
1 head boston lettuce, well washed and chopped
1/4 cup half and half
1 tsp. kosher salt
1 tbsp. creme fraiche (optional)
chopped herbs for garnish

Melt the butter and add the leeks. Cover the pot and sweat over low heat until the leeks are tender, about 10 minutes.

Stir in the flour and cook, stirring, for a couple of minutes.

Whisk in the stock and the water and bring to a boil. Cook for a couple of minutes.

Add the peas and lettuce and bring back to a boil. Reduce the heat and simmer, covered, until the peas are heated and the lettuce is wilted, about 5 minutes.

Blend soup with a stick blender (or in a blender jar) until smooth. Force the soup through a fine-meshed sieve and discard the solids.

Put soup back in pan and reheat gently. Stir in half and half and season with salt and pepper to taste.

Ladle soup into bowls and garnish with creme fraiche and chives.

Erm...we ate the entire pot of soup!!

By the way, I am still taking pictures, but I have not had time to download and edit them. I think from now on I will do a "week in pictures" recap on the weekends.

I am going to be a busy beaver today. They put the sheet rock up yesterday and the house is covered in dust. Yeah! ;)

Andrew is off this week so he is having a friend over and I will do my floors. They are coming back nect week to tape and mud so I will have a mess again then...yipee!

We are going for a quick bite at the diner tonight. I just read in the paper they were taping As the World Turns in town yesterday. Anyone watch that?

I made the Irish Brown Bread again yesterday and I added more brown sugar and raisins. This is soooooo good!

Lauren, You know, just last night I was thinking of how good that bread would be if it was just a little bit sweeter! Have to try that! :thumbsup2

:hug: for you! I know what a mess that sheetrock dust is! After you get most of the dust cleaned up, change your AC filter too. I had bought a few of the cheap ones, so I could change them everyday when neccesary.


I was lazy last night & opened up a can of tuna. Although what I did with tuna, would probably scare Poor Buddy to death!:eek: :laughing:

Here's a new recipe I found, it was a definite hit & will become a regular in our house!

Mediterranean Tuna Salad
from Southern Living Magazine

Prep: 20 min. We love how arugula pairs with this fresh tuna salad. You can stir 2 cups shredded arugula into the salad and serve it on crackers.


1 (12-oz.) aluminum foil pouch light tuna chunks in water (I used one 6 oz can white albacore)
1 (15-oz.) can chickpeas, rinsed and drained (used 1/2 can)
1/3 cup chopped pitted kalamata olives (probably added more)
1/4 cup olive oil
1 shallot, finely chopped (no shallots, used a quarter of an onion)
1 tablespoon drained capers, chopped
2 teaspoons grated lemon rind
1 to 2 Tbsp. fresh lemon juice
1 teaspoon minced garlic
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 avocado diced *
parsley-a couple of sprigs*
basil- 2 large leaves julienned*
red pepper flakes- a pinch*
Assorted flatbread or pita wedges
Arugula
Feta cheese

1. Stir together first 12 ingredients in a large bowl. Cover and chill until ready to serve. Serve with flatbread, arugula, and feta.

Note: For testing purposes only, we used StarKist Flavor Fresh Pouch Chunk Light Tuna In Water.


Yield: Makes 4 cups

I stuffed the pita breads with the tuna & sprinkled in the feta. I used Boston lettuce, cause I was out of arugula. This would have been really great with arugula.
 
2 nights in a row of lazy cooking for me. I took big hot dogs and pan fried them..I sliced them down the middle and put cheese and diced jalapenos in them. They were really good..

That sounds yummy to me. You've got me craving some! Hmmmmm maybe tonight! :yay:
 
The marinade is really good. I use it on everything, pork, chicken, shrimp, even veggies I slice up and grill. So simple too.
 
Just when I think things can't get worse - they do. When I left for work this morning my dog Sammie was trembling. I called a friend to go and check on her for me mid-morning. She found her lying on the floor as stiff as a board and she'd thrown up. If any of you have a prayer to spare for my girl please do. My friend brought her to the vet and they are checking her out now. She's an old gal but I really need her to get through this.:sad1:
