Here's a pic of last night's dinner, Salmon with guinness sauce, haricot verts w/ spiced pecans and potato leek soup with the addition of Dubliner cheese & bacon on top.

I marinated the Salmon in evoo, a little cajun seasoning, garlic, a little lemon juice & sherry. Then I pan-seared it in butter/evoo until the skin was crispy. I topped it with the guinness sauce & then finished the salmon under the broiler. This is going to be a keeper for cooking salmon, one of the best I've tried.

I am drooling... I need to recreate this meal. I LOVE Dubliner cheese, too!

Had McDonalds - I love their quarter pounder with cheese. Went straight to the hips but after my day, I don't care...

Strawberry Daiquiri Cake


Cake:
1 package of Supermoist White Cake Mix
3/4-cup water
1 package (0.14 oz) of strawberry Kool-aid mix (powder)
1 tablespoon grated lime peel
3/4-teaspoon rum extract (optional)
1 10 oz carton of frozen sliced strawberries thawed and undrained.
3 eggs

Lime Frosting:
1 tub vanilla frosting (I like the pour able kind best)
2 teaspoons grated lime peel

1. Heat oven to 350. Grease bottom of 13x9 inch pan or line cupcake pan with liners. (Will make 24 cupcakes)
2. In large bowl beat all cake ingredients with electric mixer on low for 30 seconds, then beat on medium speed for an additional 2 minutes scraping the bowl occasionally.
3. For cake cook 30-35 minutes. For cupcakes cook 18-25 minutes. Both are done when toothpick comes out clean. Let cool for 15 minutes before icing
4. Mix remaining 2 tablespoons of lime peel into icing and stir. It helps to heat the icing for about 20 seconds in the microwave first, and makes it easier to poor or spoon onto the cake.
5. Top with fresh, sliced strawberries.

Note: I put strawberries on the pieces I serve so the left over ones don't go bad. I also keep leftovers of this cake in the fridge, it keeps a lot better.

I have unsweetened strawberries and I have strawberries in syrup. Which do I use?? Help ASAP!!! I have to get my cakes made this morning!!

Lindsay I think those cartons of strawberries are packed in syrup so I would the ones you have in syrup.
 
Morning all! Last night ended up being pizza and beer while watching basketball. The one time of year I even care about teh game. DH and I always make out brackets to see who "wins". Tonight is dinner with our church group, so food is not up to me. I do have to make a side dish and dessert for a picnic tomorrow. Gonna make mac and cheese (main food is fried chicken) and Polynesian Sunshine Pie (a new recipe, sounded yummo, though!)
 
The haircuts went great. Poor Liam, though. He was the only boy in the house, and eventually, all the girls ganged up on him. When we got home, I gave the kids each a cupcake and a scoop of ice cream. Liam said, "Mom always surprises us...usually with food." :laughing:

Andrew has baseball practice tonight at 6pm so we will pick up pizza on the way home.

I brought a lot of work home that needs to be done today also need to get Easter groceries and start planning my cooking strategy as we have to spend most of the day tomorrow going to and from Kyle's game.

WFD - Good Friday is always boiled crawfish here!!!!:yay:

I just put the strawberry daquiri cake in the oven. While assembling my ingredients, I discovered my brand-new bottle of rum extract decided to get up and walk out. Frustrated, I decided to subsitute it with Grand Marnier. Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm boy, was the batter good!!!

I'm off to lick the bowl :)

Blender Hollandaise

(this is a Barefoot Contessa recipe, and it makes a LOT--enough for at least 8 and up to twelve people)

12 tbsp. butter
4 extra large egg yolks, at room temp.
5 tbsp. fresh lemon juice
1/4 tsp. black pepper
1.5 tsp. kosher salt
pinch of cayenne

melt butter.

Place egg yolks, lemon juice, salt, pepper, and cayenne in a blender. Blen 15 seconds. With blender running, slowly pour in hot butter and blend until thick.

The sauce will hold for one hour at room temperature. To reheat, add 1 tbsp. hot water to the sauce and blend for a few seconds.

So, I don't know if we are going out after all. I forgot that it is restaurant week. I HATE restaurant week! All the places are too crowded and they all serve the same boring crud--chicken, salmon, or steak. I'm going to have to try and find a place that is not participating.
 
Hi! I am stopping in but have a mountain of things to accomplish today. I'm glad that some of you all are feeling better and hope that this darn season ends soon. Too much flu, colds and general yuck going around!

Dinner will be maybe salmon pie. I promised my Aunt I would make one today for her and while she forgets a lot she will not forget this so i better follow through. My DH is home but he is off at the farm so I am not going to be sidetracked all day and Marisa is shopping with Kady. W started this last night but something in her transmission let go and that was the end of all that. Dan had to come rescue us and then we went to dinner....Chinese....Yumm. Risa is cranky becasue this is not an expense she was expecting, her poor mechanic has to call when he determines what happened. The worst part is that she almost traded her truck in a month ago and decided to wait and get exactly what she wanted. Her DH is the one who suggested that she not compromise this time. I think he may be ducking for cover today
 
Again, I have no idea what is for dinner... Good Friday service is at 7pm and I'll be at work until then ends so it'll be another late night. We may just be getting our own stuff again.

It is 11 degrees here today and we have 30 mph winds.....so it is freeeeezing out. That being said as soon as Ross gets home, we have to go get him new sneakers, as he informed me last night that he can no longer get his on....why he waits until this point I'll never know. So I figured that when we go do that we will go get groceries as well, seeing how Olympia Sports and Hannaford are next to each other, and this way I only have to make 1 drive in to town. He will be grumpy to have to get groceries, but when he starts paying for the gas he can have a say, lol;)!

Geez I just realized that I never put wfd on here......I just started cooking and remembered...........tonight is chicken with sbr, glazed carrots, and italian potatoes. easy and yummy!
 
I made sole stuffed with spinach, shallots and parmesan cheese, baked in a tomato, basil cream sauce; Beck's baked pasta alfredo (mostly for the kids...I had a few bites); sauteed spinach, and rolls. It was good, but when eating it, I couldn't believe how I had managed to make so many good foods so unhealthy! :laughing:

Tonight we are having Easter dinner at my mom's house. I am taking the strawberry daiquiri cake (lost the rum extract and had to use Grand Marnier, what should I call it now?) and a Chocolate Kahlua pound cake. My mom is making turkey and dressing and a few other things. I can't wait!

ETA: Should I put the cake in the fridge and serve cold, or room temp?
 
Hi Y'all,

We had a nice Good Friday. Even though it was filled with yard work, DD & SIL were here. We ordered seafood po-boys & the weather was gorgeous!


That salmon looks really good, and anything with guinness in it is good with me!

I think I am making pasta tonight. I am craving a big plate of tomatoey carby cheesy goodness! I'll make an arugula salad to go with it, which will cancel out all of the calories and fat from the pasta, dontcha know. ;)

Where's the V-8 slap-to-the-head smilie?? Salting / draining the eggplant never crossed my mind. Of course, I was slightly distracted with the off-schedule crock pot roast. I don't usually buy eggplant off season from the produce stand - we normally get so much fresh during the summer. Now that's a childhood summer chore flashback I'd rather not remember....peeling & processing grocery bags full of those huge eggplant fresh from my Great Uncle's garden.

Talk about some fierce competition for that kiosk. So you which State Official do you think is cruising the DIS Boards for ideas? ;)

Grocery bags full of Eggplant!!!:eek: I have those not so pleasant childhood memories too! Shelling buckets full of field peas sent from "the country". Even more unpleasant was having to eat them!

Let's hope if the State officials manage to pull this off, that they rely on Disney for ideas!;)

Aimee, the addition of the cheese & bacon really made that Potato Leek soup something special! And my dubliner cheese is almost all gone already! I wonder who could have eaten all that cheese? ;) :laughing:

Oh I forgot two things!

Dinner Thursday evening. It was yummy. Although I hate to post my pic right after those two beautiful pics from the Liam sisters!

Jerk Chicken (I know it looks burnt, but it wasn't)
Avocado-Pineapple Relish, Slaw & Becky's yummy Coconut-Pineapple Rice

And oh yeah, the "Lite" Pina Colada, I used 1 c. coconut milk, 1 c. organic pineapple juice, 1/2 c. fresh pineapple, 1/2 c. dark rum & blended with a little ice. The recipe called for 4 tbsp. of sugar, I used half sugar, half Splenda.

This was a really nice refreshing version of pina colada's. I think this recipe will get used a lot this summer!

After some Easter candy & card shopping today, Dinner this evening will probably be filets on the grill. Our patio furniture & yard is all cleaned up now. If the weather stays nice, maybe dinner outside.
 
morning all--

Getting ready to take Ross to karate to teach his little kids class. He is excited as it is the Easter class and they hide eggs for the little dragons to find.

Kris is working this morning at the office, then has to go see a client before coming home for Ross and himself to go get haircuts. I should dust the house,and do laundry, we will see if that happens, or if I curl up on the couch and watch tv. ( I didn't sleep well last night so TV might win out)

Kris wants to pick up Pizza for supper so I won't argue on that one. Easy for myself, and yummy too. He will grab a bucket of wings to go with it as well. I figure my thin crust veggie pizza will cancel out the calories of the wings, ;)

Did you have a recipe for that? or did you just wing it?
:laughing: You know me well. Yes, I mostly winged it, although I based the stuffing on my mom's spinach gratin, and the tomato cream sauce is one I have made before. I referenced one of my seafood books for cooking time and temp for the fish. I can post the recipe if you want it.

Today we are celebrating Easter and Liam's birthday (birthdays in our house are usually month-long events...) at my ILs. I shudder to think what we will be eating, but as I told Beck, at least there will be wine. :thumbsup2
