Here's a pic of last night's dinner, Salmon with guinness sauce, haricot verts w/ spiced pecans and potato leek soup with the addition of Dubliner cheese & bacon on top.

I marinated the Salmon in evoo, a little cajun seasoning, garlic, a little lemon juice & sherry. Then I pan-seared it in butter/evoo until the skin was crispy. I topped it with the guinness sauce & then finished the salmon under the broiler. This is going to be a keeper for cooking salmon, one of the best I've tried.
I am drooling... I need to recreate this meal. I LOVE Dubliner cheese, too!

My internet is back up!Got a call from my insurance company and they suggest we go into arbitration on this who's at fault matter. They said there were some inconsistencies in the other party's statement. Gee, ya think?
