Bobby's Goulash last night was good. I cut the recipe in half and changed the amounts of the seasonings though. I always like to check out the reviews on Food Network recipes before I make them. A lot of people said the original recipe was way too salty.

Tonight I'm making Kathy's Velvet Shrimp, except with chicken. For anyone who has made it with chicken, do you do anything differently?

Well, today is OK BUT I was trying to get out of the house this morning and pulled some kind of muscle in my leg that traveled up my back and was in pain for a good 1/2 hour...crying pain. It is still a bit sore but will be OK.

I didn't. I just substituted the chicken, and it was wonderful!!! DH really liked it. It may be time to do it again!

I've never had a problem with them breaking, just be sure you don't over cook them.

I had thought about undercooking them a little bit. I'm so excited. I'm craving them so badly!!!

I served it with pita bread & the raita (yogurt sauce) from Stephanie's recipe. It was delicious, Bob was a happy man. Thanks again Steph!:thumbsup2

Tonight will be something with chicken thighs, not sure yet what I'll do with them. They were buy one get one free at the grocery yesterday, so I have lots of chicken thighs.

I love chicken thighs. If you can't figure out what to make, I have several recipes that are favorites at my house.
 
Here is the pasta salad I made for my party on Monday night:

Recipe:
Garden Pasta Salad
Submitted by: L. Gale
Rated: 4 out of 5 by 140 members Yields: 9 servings (I upped it to 15)

INGREDIENTS:
1 (16 ounce) package uncooked tri-color spiral pasta
1/2 cup thinly sliced carrots
2 stalks celery, chopped
1/2 cup chopped green bell pepper
1/2 cup cucumbers, peeled and thinly sliced
2 large tomatoes, diced
1/4 cup chopped onion
2 (16 ounce) bottles Italian-style salad dressing
1/2 cup grated Parmesan
cheese

DIRECTIONS:
1. Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
2. Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.
3. Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well.
4. Chill for one hour before serving.

My changes: I just about doubled it to make sure I had plenty, but I cut back on the dressing since the reviews said to. I used maybe 1 16 ounce bottle and it was perfect. Just poured, mix, tasted until it was right. I used brocolli, grape tomatos so people could pick them out if they didn't like them, celery, and carrot. It'd be good tossed with salad shrimp, ham, or chicken I think.

I also did a fruit salad (read: dump bagged fruit from Costco into bowl)

I forgot to get a picture of the punch! I tweaked a recipe that called for chilled cranberry juice cocktail, chilled pineapple juice (unsweetened), chilled club soda, and chilled ginger ale plus vodka. I started out measuring and then decided to just dump and taste. It was YUMMY and pretty in a martini glass.

Teriyaki Chicken Thighs Recipe by Ellie Krieger

1/4 cup low-sodium soy sauce
2 tablespoons brown sugar
2 tablespoons dry sherry
2 tablespoons rice vinegar
2 garlic cloves, crushed with a garlic press or minced
1 teaspoon finely grated fresh ginger
1/4 teaspoon red pepper flakes
2 pounds skinless chicken thighs
2 teaspoons sesame seeds

Combine the soy sauce, sugar, sherry, vinegar, garlic, ginger and red pepper flakes and stir until the sugar dissolves. Transfer to a resealable plastic bag and add the chicken. Seal the bag and marinate the chicken in the refrigerator, turning once, for 1 hour. The chicken can be marinated for up to 4 hours.
Heat the broiler to high. Arrange the chicken on a broiler pan skin side down and broil until brown and crispy, 8 to 10 minutes. Flip the chicken and broil until almost cooked through, about 8 minutes longer. Sprinkle with sesame seeds and cook until the seeds turn golden brown and the chicken is done, 1 to 2 minutes longer.


Portuguese Grilled Chicken Thighs
1/2 cup red wine vinegar
2 teaspoons salt
1/2 teaspoon coarsely ground black pepper
2 teaspoons dried oregano
1/4 cup olive oil
9 chicken thighs

Combine vinegar, salt, pepper, oregano and oil. Marinate chicken for 30 minutes to 2 hours. Grill until cooked through.


I have another one for Arroz con Pollo, but I'll post it later, after I find the recipe.
 
Tonight's dinner will be something with a pork tenderloin. I really wanted to use the ranch salad dressing but I don't have one on hand and am too busy at work to go get one. I'll do something with it.

I may have leftover pasta salad with it, or potatos. Dunno what else.

DH is playing basketball until 930 but I didn't want to buy anything out again.
 
Sandy - Both of those look great. If I hadn't already bought everything I need to do Jerk Chicken this weekend, one of those would be on the menu for sure!!:thumbsup2

Thanks for those chicken recipes. Tom does not like anything on the bone but it seems Ican use boneless breasts too.

I am feeling a bit under the weather today. I think I have a little cold. Hopefully, it won't morph into anything worse. Dinner is ultimate comfort, cold-fighting food...nope, not chicken noodle soup. For me, that is spaghetti and meatballs, garlic bread, salad and a big glass of red wine.

Sorry if I missed anyone...I have to go pick up the kids from school!

Some of these recipes look awesome.

We are having homemade chicken pot pie. I have never made it before and DH loves it so I am going to try. I am currently (and have been for the last 5 hours) simmering chicken bones, veggies and spices in water. Still tastes pretty watery! Might have to succomb to some chicken paste in the water!
