Here are some photos from dinner last night. I had to cook the shrimp I bought for the super bowl party and forgot to make, so I went with my fallback simple grilled shrimp recipe. Here they are, marinating in garlic, olive oil, parsely, and breadcrumbs:

I also made swordfish. I cut one steak into four very thin slices and then stuffed it with breadcrumbs, parsley, olive oil, and salt and pepper. Then I made a sauce from white wine, tomatoes, thyme, onion, garlic, red pepper flakes, olives, capers, currants, and parsley, and baked the fish in that. Here it is just out of the oven:

This was a Mario Batali recipe and it was very good!

Pork Schnitzel
6 boneless top pork loin chops (1/2 inch thick, 1 1/2 pounds), trimmed
1/2 teaspoon salt
1/3 cup all-purpose flour
1/4 cup dried bread crumbs
1 egg
1/4 cup milk
3 tablespoons oil

Place chops between 2 sheets of waxed paper. With meat mallet or rolling pin, pound to 1/8-inch thick. Sprinkle both sides with salt.
Measure flour and bread crumbs onto separate sheets of waxed paper. Whisk together egg and milk in bowl. Lightly coat cutlets in flour, shaking off excess; dip in egg mixture, then into bread crumbs, pressing crumbs to coat.

Heat oil in large nonstick skillet over medium-high heat.add cutlets. Cook until golden brown, about 3 minutes per side.

I serve them with a baby portabella mushroom gravy. (I am going to cheat and use a mushroom gravy package and add a package of sliced fresh baby bellas)

1 lb of shrimp, peeled and deveined
2 cloves of garlic, very finely minced
about 3 tbsp. finely minced parsely
about 2 tbsp. olive oil
about 1/3 cup fine dry breadcrumbs

Toss the shrimp with the garlic, parsely, and olive oil, plus salt and pepper to taste. Add just enough breadcrumbs to make a very thin coating--that's why I posted the raw photo, I wanted you to see that you don't want a full crumb coating. Then set shrimp aside to steep for at least 30 minutes and up to 2 hours. Thread onto skewers and grill until just cooked through on both sides--these shrimp were 20 count/lb and I think they took about 6 minutes total.

Did I miss a post, how was the party last night??????

It went really well! With illness going around, half didn't make it but we had 7 ladies which was just perfect. I had TONS of food leftover, of course, but it's nothing that DH and I won't eat (or can't freeze for later).
 
I went out to vote and to get some banking done in case we do get all the snow they are predicting.

Well the first wave of our storm has started. I'm not sure what I want lots of snow or not, do I want to go to work tomorrow or not. Oh the choices.;)

Tonight we are having pizza. I'm too tired to actually cook. I may have to have a drink or two tonight I don't sleep well when we get storms. It's a control thing.

I am making blackend shrimp in tomatoes, over rice, and green beans... and Oreo cookies for dessert
 
Glynis- the lime chicken nachos were a hit! Kady especially liked them, more like party food than a meal to her so she was in her glory. Party Pooper DH pied his in a bowl, topped it with cole slaw and Worcester and ate it that way. I forgot..............Mexican food does not look like food :confused3. Wait until tomorrow when Lent begins and I try to give him breakfast for dinner.........he won't know to do :rotfl::rotfl::rotfl::rotfl::rotfl:
 
Just wanted to say the Creamy Italian Chicken was a hit and Super easy!! I added some creole seasoning for a kick and thought it could use a little color and added green onions and parsley at the end when tossing with the pasta. Definitely a keeper!!!!!:thumbsup2

I have to add that he thinks I am doing this already. Just this afternoon he told me that when I get him used to one thing I change it and then I wait until he gets used to that................and it changes. All this because I picked up the paper for him this afternoon.....and this is after I stopped picking it up and he started walking to the box so he didn't need to trot back out after dinner.......
I never said a word, just pointed to my head then his, and told him I live to make him crazy. I really think he is alone in that truck too much...................

Hope that your babies feel better soon. I remember when my own were little, one would get that nasty bug and within hours they all got it. I never could keep up with all three, and God forbid that i get sick as well. :upsidedow

Funny thing is my DH raised cows, cleaned up after cows, fed the cows.......and he could not clean up after sick kids....I would have had one more to clean up after one more...:sad2:

Bless you. Lucky for me, my hubby doesn't have that problem. I've told him several times today he wins MVP. He was quite a trooper. He got my angel bathed, dressed, and even attempted hair styling this morning. Not that it was the greatest hair style, but even my Mom agreed that it was a good attempt. As for the post-sickness cleanup, the only question is who cleans the room and who cleans the child. He generally cleans the room as he prefers that to dealing with the (generally) crying child.

But I can relate to how your DH could care for sick cows and not sick kids. My brother is a licensed embalmer (doesn't do it anymore). He has done, well almost everything you can imagine. However, changing a baby's diaper makes him gag. Seriously. Explain that one to me.

Yum. Grand Marnier sounds good. However, I don't have any of that. All I can manage tonight is vodka and tonic. When that runs out, I may finish the last of the beer. Just kidding. Maybe.


Dinner tonight will be broccoli cheddar soup with biscuits or breadsticks. We are in the middle of another snowstorm, so soup sounds good to me!

WFD? I'm making chicken fajitas using Chili's marinade.

Does this mean no propane? Not that I'm teasing. I wish we grilled more, but we use charcoal and I can't work it at all, so I'm at DH's mercy and he works so many late nights grilling is usually on the weekends.

Well, we are back from the doctor. Andrew has a bad cold and the start of an ear infection.

OK, off to medicate Andrew and marinate my pot roast for tomorrow. I got my Le Creuset pot and want to use it! :woohoo:

Sorry about Andrew. Ear infections are miserable and I hope he gets to feeling better quickly.

Thank you so much. I'm glad Kathy asked for this because when I was scrolling through today's posts, Kenny saw the picture of the shrimp and wanted to know if I could make them. I can't wait to tell him he's going to be the one making them since they're grilled.

If you're like me, you would have still had tons of food left over if everyone had shown up. It's nice you can freeze the leftovers. Maybe you and hubby can have a Saturday movie day one day when the weather is bad.

The official word is that A & P have the stomach virus, but A also has bronchitis. Right now, it appears that H only has a bad cold. I'll have to watch her to make sure it doesn't turn into something worse, but she's holding on right now. After the huge wad of cash I just spent at the pharmacy, I hope all three are soon going to be on the mend.

Actually DH did get the propane yesterday so we had the hamburgers and I grilled the chicken for the fajitas. I grill a lot. DH lost his grill privileges after he burned one too many expensive steaks. He has the attention span of a gnat. :lmao:
 
I'm having brown rice and steamed veggies. Not the most exciting meal that's for sure.
