That's why I love this thread. The recipes are all tried and true. A recipe may not be to your family's taste, but the recipe itself is a good one.

Hi Y'all! (I am often a reader, seldom a poster)

I hope someone here can help me with something.

I made a recipe tonight that called for a small amount of Chipotle Pepper Puree, so I got a can of the peppers in the adobe sauce.

I would freeze them as well. I have a recipe that you can use a few more of those peppers if you would like it. Rachel Rays backed Chimichangas, they are a favorite in my home.

Dinner this evening was good. I made boxed stuffing which was alright but without gravy, I did not have time, it was not great. I saved it and will try to do something this week with it.
 
You have had a lot lately and this is not helping is it? I agree with not killing a husband by drinking. My DH cannot understand why it is not available at the blink of an eye! Did he just meet me????????? Last night I just turned around, poured a little glass of brandy and he asked my what did he say:headache:!!!!!!! Are you kidding me....after the day I had?????? Did he want to try just one day doing my job?????? By then he could not hide fast enough

That is just how Kenny is. He is always picking the reports apart before I have a chance to finish them. I have told him a million times that if he was a paying client, I'd charge him double for the extra trouble. During the really bad times, I have to send him out of the house on an errand or I'd have to make room in my freezer. :rotfl:



Would you mind PM'ing me all these recipes? I'd love to have them! I know I tried the velvet shrimp and loved it! I have no idea what I did with that recipe, but it's not with the other WFD recipes I copied and pasted. Thank you, thank you, thank you!

This is the link of my mom's obituary that was in the newspaper yesterday, if anyone would like to read it. She didn't want any obit. but we just couldn't let that happen. I wrote it and kept it sweet and simple. My dad called me yesterday after he saw it and told me it was perfect and that she would have loved it. That was nice to hear.............my mother is Nancie Stewart, you have to pick modify search and then pick yesterdays date on the calender

Yes I would! We really liked the taste of the potato salad, it's the first time I have used them in a recipe so adding more ways to use them would be great! Thank you very much!! :)

Wendie, you told the story of you Mom and her family in such a lovely manner and the poem was a perfect way to express your feelings. Your Dad is right, it is perfect.

I know that you are in such pain now, I don't know how to speed this up, I really don't think it is possible and I don't think you should. It's good that you can cook, I tried and it is a miracle that I did not burn the house down or poison my family. Give yourself permission to be sad, it is okay and if you need anything I am here. :hug:

:rotfl::rotfl: I told my DH that I would never work for him! We never have trouble getting help, he is a peach to work for if you aren't me so he cannot understand why I find him to be a pill!

[FONT=&quot]1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely chopped[/FONT]
[FONT=&quot]Preheat your toaster oven to 400 degrees F or high. [/FONT]
[FONT=&quot]Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Wendie, You did a very nice job with the obit...the poem at the end was very touching. I continue to pray for you and your family.

It is very hard, I know. I remember when I went to work after my dear Dad died that I sat in cubicle and cried for about a week...I thought that pain would never go away. Now, I think of all the good times we had and smile. I miss him terribly. 1/31 will be 3 years.

Wendie, the obit is beautiful. Like Nancy, I'm glad you are beginning your road to normalcy, but I agree that your grief won't be rushed. Please lean on us whenever you need to. That's what we are here for.

Nancy - I looked longingly at your recipe, but alas, since my DH won't think of eating Mexican anything (except Kathy's stuffed shells), I didn't bother to print it. It sure sounds good though. (sigh)

Tonight's dinner is leftover braised pork. We normally don't have leftovers of that dish, but I intentionally made too much so I could work tonight and not cook.

I hope to catch up with all of you later today.
 
The recipe for the stew as it basically appeared in the Disney cookbook:

Curried Coconut Chicken Stew

1 chicken, cut into 8 pieces, rubbed with 1 tbsp. curry powder and salt and pepper to taste (I did this the night before)
3 tbsp. canola oil
1 cup onion, diced chunky
1 cup red bell pepper, diced chunky
1 cup potato, peeled and diced chunky (I used sweet potato)
½ seeded jalepeno, diced (I used a whole one)
1 cup coconut milk (I just used the whole can)
4 cups chicken stock
6 tbsp. butter
¾ cup flour (I used 6 tbsp.)
1 cup canned diced tomatoes, drained (I used the whole 14 ounce can)
1 ½ tbsp. curry powder
1 tsp. cayenne pepper
½ cup minced cilantro

Heat the oil in a large pan and sear the chicken until well browned on both sides (it will not be cooked all the way through). Place the chicken aside and drain the oil from the pot.

Melt the butter in the same pan, then stir in the flour. Cook until a roux is formed (I cooked mine for about 7 minutes). Add the curry powder and cayenne, and stir. Add the tomatoes and the chicken stock and simmer until thickened. Stir in the coconut milk and dissolve. Add in all of the vegetables and the chicken, and cook until the vegetables are softened and the chicken is cooked through, about 20 minutes. Stir in the cilantro and serve.

Note: I added a tablespoon of sambal oelek paste to make it even spicier. Also, next time I would sauté the onions in the butter before adding the flour instead of adding them with the other vegetables. I would have liked them to be very tender, and the way the stew is made here they are still a little crunchy. DH liked them that way, but I like my onions melting soft.

Tonight for dinner I am making carmelized tofu, fried rice, and blasted baby bok choy with soy. I was going to make egg rolls too, but I know I am going to get home too late to pull them together.

I grew up off of egg rolls. :lmao: Of course my mom is Filipina and whenever there was something going on she would bust out the egg rolls, except for we called them Lumpia. :thumbsup2

I always make them now and I keep a bunch frozen in the freezer to have on hand.
 
Gretchen, Thank you for the PM! I cannot believe that I did not save alot of the recipes that I even posted. It really makes me happy that Kenny really likes that recipe. :thumbsup2

I am "winging it" with the chicken and dumplings, but if it does come good, I will definitely post what I did. :) My mother always fried the chicken and had the dumplings on the side and served the broth on the side too. I am making it more of like a chicken soup. I'll even take a pic if it comes good. :) BTW, I used to LOVE my Mom's dumplings with a little french dressing...wierd, huh?

OK, I am off to get some more things done. I had the internet co here again today, then a guy is coming to look at our garage to get a quote for a new one. :scared1: And then A will be home, they have a1/2 day today.
