Hello my WFD family...I see we have some new members.....I have no clue why we have moved and what has happened, but glad I was able to find you all!!! Where are the recipes, did they follow us as well?

I want to thank you all for your expressions of sympathy, prayers and thoughts......that is what is getting all of us through this sad time.
Things are pretty rough for me, still having a hard time to accept that my mother is gone...I have had a couple of days that I actually went to call the hospital to check on her, then remembered, that was like being sucker punched! Her obituary that I wrote for the local paper in Maine printed today, reading that was like an out of body experience, nothing more real then seeing it in print.

I am hoping to catch back up on everyone's lives, but think I might have to start fresh this week, I did read the last page to see if it was everyone. I actually did get dressed and ran to the store today, I wanted to buy newspapers for everyone out of state etc. I think it did me good to get dressed and get out of the house for a bit. I felt like a zombie in the store, but made it through without crying!!!

Sheryl--the cheese grits recipe sounds delish, comfort food and that is what I am craving!! I am the one whose coffee package was empty when it arrived due to damages.

Kat--I send you big hugs my dear friend.....get ahold of me if you need me!

Lauren--I had to stop at the local natural food store for granola, and I saw that they carried your sil's cheeses. I picked up the green onion and the colby!!

Nancy--I see that I missed Buddy's b-day as well....please wish him a belated b-day from me, I hope he had a nice one!

I know I missed a ton...I am sorry...I will try to get back on later or tomorrow for sure. Have a great day my wonderful friends!!
 
Hi friends - just checking in.

Tonight is my only night home for the next 12 days so I figured I should cook something. So, I think I'll do meatloaf and something with potatos. I threw some ground beef out to thaw on my way out the door.

I need to grocery shop tonight after dinner and get DH things he'll want to eat. We have a deal - I cook, he cleans. So, I try to uphold my end of the bargain even if I'm not home so he'll continue to clean HA HA! I may try to throw together a few things tonight and freeze them for him.

He's so understanding right now that I can't be home much. The least I can do is leave him food so he eats something other than Taco Bell for 2 weeks! =)

ETA: In a nutshell, the issue we are having is that a group of (filthy rich) church members have drawn up legal documents and offered our pastor $$$ to leave quietly. If he refused that, then they would throw him out. The entire church is in an uproar over it, obviously, because people are on all sides. As a minister, it's really hard for me to continue to minister to such hateful people but I have to do it. I put on my game face yesterday but cried all the way home. This is only the beginning so there will be many more painful Sundays and meetings to endure.
 
Okay, I hope it works for you, I had to hunt & adapt several different ones because I couldn't find my "easy" version I had worked on for a long time!

Tonight we are having black beans and rice, broccoli casserole and a Florida Crunch Salad :tongue: A friend brought the recipe to a potluck and I've been dying to try it so I'm looking forward to it and hoping it comes out as good as hers did! I have hard rolls and butter too always have to have that :)

Is is possible to attach a folder to a post here? I have a lot from this thread in my cookbook on my desktop and will share. I moved a lot of those recipes but did not always post names.

We are having a mango salsa chicken bake tonight with Israeli couscous, broccoli corn and salad. If it is good I'll post the recipe.

Tonight is black bean soup & jalapeno cornbread.

Black Bean Soup (I tend to make this up as I go so pardon if the instructions aren't the best; all amounts are approximate, as I don't measure all that much unless I'm baking):

Soak/cook one bag of dried black beans according to instructions.

Saute 1/2 lb. of chopped ham or bacon w/about 1 c. of chopped onion, 1/2 c. of chopped carrot, and 1-2 tbsp. of chopped garlic (we love garlic!).
Combine cooked beans w/above mixture, 3 cups water, 1 can of tomato sauce, 1 tsp. chili powder, 1-2 tsp. of cumin, 3 bouillion cubes (I use vegetable). Simmer for about an hour. About 20 minutes before serving, add about 2-3 tsp. of chopped cilantro and 1 cup of frozen corn.

Jalapeno Cornbread

Use Jiffy mix of corn muffins, but add in about 1 tsp. chopped jalapenos and about 1/3 c. of sour cream. Bake in hot cast iron skillet about 20-25 min or until done. This is SO good!

That sounds yummy & your recipes sound like mine! Not very specific cause I hardly ever measure & never do the same thing twice. I've made the corn bread with chopped green chiles, corn & sharp cheddar added to the batter. It was hit with my DH! But I will have to add sour cream next time. I'll have to try your black beans too, I've never added the tomato sauce before! Thanks for your recipes!
 
Baked Ranch Chicken (breasts dipped in sour cream, then in a bread crumb/ranch dressing mix). Yum!
 
Tonight we are having turkey ham steak cooked with worcheshire sauce, soy sauce, pineapple juice/chunks. Fried with no grease. Add a touch of brown sugar at the end to thicken sauce.

Homemade applesauce, basmati rice, and green beans.

Here's the coconut jasmine rice recipe. Enjoy. It's really yummy!

1-cup chicken stock or broth
1/4-cup coconut milk (the kind in the Asian food section-I like Thai Kitchen)
1 cup jasmine rice

IN a saucepot combine the chicken stock, coconut milk and the jasmine rice. Bring to a simmer, cover and cook for 15-18 minutes.

put whole chicken in crock pot

combine 1/4 cup soy sauce with 2 tbsp ketchup and pour over top (the ketchup helps make it more of a glaze that stays on the top)

add a sliced onion and 6 cloves of garlic on top

i cook mine all day on low, because it fits my work schedule

the meat will fall off the bone

think next time i'm just going to try with chicken breasts
 
The chicken was really good tonight.
6 boneless chicken breasts
3/4 cup ketchup
1/4 cup honey
1/2 cup salsa (I used mango salsa)
1 1/2 T Dijon mustard (I used ballpark, that was what I had on hand)
1 1/2 tsp chili powder
1/2 tsp cumin
1 T cornstarch

lay chicken in a baking pan
mix remaining ingredients but cornstarch and top chicken
bake at 400 degrees for 30 minutes
remove chicken and thicken sauce with cornstarch


I doubled the sauce bit did not rally need to, and added extra honey. It is a little spicy, but very good. I will use chicken thighs next time.

Another disclaimer: Buddy gave the sauce a 3 out of 10. That was because he said it was okay so I told him that I knew I would make it again since he liked it :lmao::lmao::lmao:. I will anyway, Kady gave it a 10!
