What's everyone baking?

Well, from what I can gather, it's coconut, strawberry gelatin mix, and other stuff. That's all I got. I was busy watching basketball.
Well you can now get in the kitchen and start baking no more basketball until after Christmas. I missed the Sat game because I forgot to DVR it. Sigh. I'm not sure what that team needs. More points? The funny thing was my Facebook account showed that KY had won the game. Not sure why they didn't throw the new guy into the game. Any predictions for this Sat game? It's hard being a UK fan here. Last year I tried to find a UK basketball shirt and the places I asked about it didn't even know who they are. They thought maybe it was the United Kingdom. lol. Well at least my uncle got me some shirts this summer.
O.k. sorry to digress a bit maybe we need a basketball thread or just one for the Wildcats.
Just finished my baking for the night. Was in the kitchen from 10 am to 1030 pm and still more tomorrow. I was going to let my 3 year old niece help with the gingerbread but I may be running out of time.

Another tradition my family does is they make bourbon balls. I just never got used to the taste of them. Both of my parents have been retired for a while but they still get orders from their co-workers etc. In high school I gave some to my band director and he loved them. When I was teaching in VA I brought some back from NH and the principal and vice principal tried them right there. Ha!! The VP was even pregnant at the time and she was like sure I'll have one. lol.
 
I know. It's ridiculous really. We're a family if five. I work in a school so all last week I brought cookies in and I'll do the same this week for the different dept. lunches. We'll visit with family over the break so I'll bring a bunch along.
I actually have to restock the chocolate chips. Gave too many of those away and now the kids won't have any here for Santa!

Aw, that's nice, though. Nobody doesn't love cookies, especially when you work at a school, haha.

Gotta leave those chocolate chip cookies for Santa, I've heard he leaves you coal if you leave him anything else. Lol
 
From the DGF...
New this year, we have been making Southern Comfort Bundt Cake...it's amazing.


  • 1 (18.25 ounce) package yellow cake mix
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1/2 cup Southern Comfort liqueur
  • 1 1/2 cups chopped walnuts
  • Add all ingredients to list
  1. Preheat oven to 350 degrees F (175 degrees C). Spray one 9 inch bundt pan with non-stick cooking spray.
  2. Combine the cake mix, instant vanilla pudding, eggs, milk, oil, Southern Comfort and chopped walnuts. Beat for 2 minutes. Then pour batter into the prepared pan.
  3. Bake at 350 degrees F (175 degrees C) for 1 hour to 1 hour and 10 minutes or until a toothpick inserted in the cake comes out clean. Let cake cool in pan for 10 minutes then invert onto a cake dish and enjoy

This sounds amazing. I sort of want to make a glaze to drizzle on top. Everything is better with more sugar, right? ....right? :rotfl:
 
@Alicenwonderment Always good to talk Kentucky hoops! I'll be honest, I was involved in a service project on Saturday afternoon and completely forgot about the game. Not shocked that they lost. But I DO think they beat the Cards on Saturday. There will bumps along the way, but I think by tournament time, they'll have as good of a chance as any to win the whole thing.

And to your other note, I've never enjoyed bourbon balls either. I *get* why they're popular, and I'm glad they're a Kentucky thing, etc., but I've never actually enjoyed the taste of them. So you're not alone there.
 

Here's one of my favorites I posted it before but I just looked at the old post and realized I forgot something from it

Butter Fingers

1/2 pound of butter
5 tablespoons icing sugar
1 cup either almond or walnuts (any nit really as this year i used pecans because we had no walnuts)
1 teaspoon vanilla
2 teaspoons cold water
2 cups flour

I usually end up using my hands to mix it as the butter melt slightly into the dry ingreds, plus it's a very hard batter to stir. We usually divide it in half and make half of each nut. After mixing the ingredients together roll pieces into small finger shaped cookies
bake at 300 until light brown
roll in icing sugar once cool

Just wanted to update everyone that I actually made edible cookies - candy cane sugar cookies - and no one cringed or had a fake smile when eating! This is a real win for me!! I also got a fancy-dancy KitchenAid for Christmas so I now have the tools - I just need to practice more. I hope everyone had a yummy holiday weekend!
