3 Resort split stays and ADR reservations..next week is 60 days

We have 3 resorts split stays and have a waitlist in hopefully change it to 2 resorts but we are upon 60 days next week. It is worth a try to call into Disney Dining at 6:00 am an have them manually book? I have seen success but do not know if it is recent. Otherwise I am up at 6:00 am every other day...I wish disney could do the same as LLs and allow it.

They don't answer the phones at 6am EST. If you want to book early, then you will need to do it at 6am online. Also, each stay is counted separately for dining reservations, keep that in mind. You will be able to book 60 plus 10 days out from the start of your first reservation.

what if I make the reservations that I can and then call back to speak with someone? Will they take care of the reservations for the remainder of the split stays?

Don't count on it. I tried two years in a row and the answer was no. However, one person here reported that a CM did do it for them. But the current policy is you can no longer allow it. YMMV!
