What's everyone baking?

I'm about to start planning out my baking for Christmas. What is everyone making this year?
Baked this past weekend.

Italian sugar cookies
Regular sugar cookies
Pine nut chocolate cookies
Peanut butter cookies
Christmas cookie balls
Caramel chocolate chip cookie balls
Fudge
Candy cane cookies
Mexican wedding cakes
Pecan thumbprint cookies
Nut clusters

Uh I think that's it but probably not lol.

I really don't bake anymore, but when I did, my most requested baked goods @ the holidays were a heavy crumb cake, a deep dish Dutch apple pie, and a pumpkin pie with walnut streusel. I also used to make a mean homemade peppermint chocolate bark. :)

I actually was not feeling the baking too much this year so I left out the fancy iced sugar cookies. Leaving...

And this weekend will be Nanimo Bars and Rumballs.

I have been trying to bake over the last few weekends and freeze some. Take half into work and freeze half!

So far I've made:
Peanut butter cup blossoms (you know the little peanut butter cookies baked in a mini muffin tin with the PB cups in the middle.. swoon)
Chocolate Chip (except my fiance dug the container out of the freezer and ate the rest of them)
Butterballs
Thumbprints
Shortbread dipped in chocolate (failure.. dough was far too crumbly and I couldn't get it to stick together at all)

Still on deck:
Muddy buddies w/ Christmas M&Ms
Cut out cookies
Chocolate covered oreos
Fudge
Saltine toffee (A new one I found online that sounds delicious)
 
For the bakery I do several assorted cookies, cheesecakes, cakes, pastries, and dinner rolls.

For our personal Christmas goodies we only do a few (since we get to eat bakery leftovers all season) but we do have some must do's for the big day.

Sour Cream coconut cake (to be eaten with my homemade boiled custard)
peanut butter chocolate chip cookie bars
coconut macaroons
chex mix (well, not a sweet, but I do bake it)

Unless some miracle occurs, I might not get any holiday baking done. I'm working all weekend, which seriously cuts into my baking time

If I find the time, I would like to make:
Peanut Butter Pretzel Squares or Peanut Butter Squares with graham cracker crumbs
Spritz Cookies
Snowballs
Magic Cookie Bars with Holiday M&M's
Rolo Pretzel Turtles
Cranberry White Chocolate Cookies or Bars (like Starbucks Cranberry Bliss Bars)
Muddy Buddies/Puppy Chow (a batch with semisweet chocolate & a batch with white chocolate)
Cookie Butter Muddy Buddies
Chex Mix
 
Apple cider donut holes - they were an enormous hit on Thanksgiving and my family basically begged me to make them again! I guess they're not true donut holes, in that they're baked and not fried, but that makes them all the healthier!

What is the strawberry something or other? I'm looking for something new and strawberries are a favorite of mine.

So far Ginger bread, chocolate chip cookies, M & M cookies, Buckeyes, Oreo balls, Reeses and Hershey Kiss, Brownies,chez mix, maybe sugar cookies. I'm also looking at the Christmas Bark I've heard about. Any one have recipe for that?
 
Well, from what I can gather, it's coconut, strawberry gelatin mix, and other stuff. That's all I got. I was busy watching basketball.
 
I'll be making Jello spritz cookies tomorrow. Probably some mexican wedding cookies and maybe some brownies this weekend.

My recipe is: (Below makes a lb.)

(1) 12-oz. package Nestle Toll House Premier white morsels (have also made this with chocolate, just prettier withe the white)

(24) Hard peppermint candies (I like the starlight mints, and would sometimes get "creative" and also get green mints, and either do batch of each, and/or mix)

Line baking sheet with parchment paper

Microwave morsels in medium, microwave-safe bowl on medium high (70%) power for 1 minute, stir. Microwave at additional 10-20 second intervals, stirring until smooth.

Place peppermint candies in heavy duty plastic bag. Crush candies using rolling pin, or other heavy object. While holding a strainer over melted morsels, pour crushed candy into strainer. Shake to release all smaller candy particles; reserve larger candy pieces. Stir to mix melted morsel mixture and smaller candy particles.

Spread to desired thickness on parchment baking sheet.

Spread evenly with bigger reserved candy pieces (can be broken up some more prior to this if desired, use own judgement). Press lightly to adhere pieces.

Let stand for about an hour, until firm. Break up into bite-size pieces.

Store in airtight container at room temp
