What would you do with two free solo days?

I have a conference in Orlando next month and am staying at the Grand Cypress Hyatt near Disney Springs. I have two free days and planned to spend one at the Epcot Arts Festival on Feb. 19th since it's closing on the 20th. Will likely go to dinner somewhere at Epcot and perhaps head to MK on the monorail to watch Wishes. The second day is completely open. What would you do? I was thinking of AK to see the new baby elephant and eating at Sanaa.

Any restaurants recommended for a solo traveler? I'm not too worried about eating TS alone, I travel for work quite often and it doesn't bother me.
 
I have done a couple of solo trips and surprisingly what I most enjoyed was walking around resorts and parks and just looking at things I never took time to enjoy when traveling with DH or family or friends. I actually did almost no rides. And I did a couple of tours that I always wanted to do but never seemed to work out when I was traveling with others. I hope you love your solo time as much as I did!

Tiffins is something I've wanted to try - maybe I'll do that instead of Sanaa. It's a bit more convenient to eat at AK rather than travel to AKL.
 

I'll join the AK chorus! I think it's my favorite park solo, as I can wander and look at things for as long as I want without compromise. Along with Tiffins, I would also suggest time in Nomad Lounge. DH and I have only been once, but absolutely loved the atmosphere - it was awesome!
 
I would go to AK and see the bird show. It seems I am always rushing by the bird show heading to a fast pass, so I've never seen it.
 
We love the AK bird show; but if I were traveling solo I might want to wander at Disney SPrings to see the newness and have Lunch at Jacques Hangar Bar then take the boat ride to POR or OKW (very relaxing).
 
Why not try something outside the parks, do something you might never have done before:
Depending upon what you are into:
sports: golf, mini-golf, fishing, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
drinking: Jellyrolls, Raglan Road, monorail tour of resorts, walking tour of resorts in the Boardwalk area
movies: DTD 24 screen theater some with meals served by waiters
night clubbing: Jellyrolls, Atlantic Dance, Raglan Road, Citywalk
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, horse drawn tour of FWC, AKL/AKV
offsite: Gaylord Palms Resort, Citywalk, swamp tour
eating: Formal GF 5* Chef's Table @ V&As
 
I would either do AK or book a tour that you might not typical think of doing on a family trip. I can see how a solo tour might actually be very enjoyable not having to worry about what your partner or rest of the family want to do. It is all about you this time!
