A nice rice pilaf thing with nuts and currants or some dried fruit in.
Grilled fruit is always nice - you can do kabobs or grill half peaches, pears, slices of pineapple, etc. - If you do something like this, first CLEAN the grill or pan thoroughly and then keep it separate for the fruit.
Tabouleh salad is nice and refreshing.
I really like acorn squash stuffed with sweet potato. You just roast some yams (if you can find Garnet Yams, totally preferable), then mash the guts with some salt, pepper, cinnamon, tiny bit of oil.
Halve acorn squash, slice the bottoms flat but so they're still solid. Scoop the seeds and all, fill with mashed yam, bake for like 40 or so minutes. With 15 or so left, glaze with maple syrup, spiced if you like. Do NOT use honey for vegan dishes.
Lots of other squashes are great roasted.
Roasted root veg is a great dish - just cut up a bunch of root veg (rutabega, turnip, carrot, parsnip, celeria, whatever's handy), trim a load of brussel sprouts, some cippolini onions, whatev... toss lightly with olive oil. Sprinkle with salt and pepper and roast in a hot oven for like 30 minutes on baking sheets, not too crowded.
Serve with rice - brown and wild, mixed, is nice, or couscous with some lemon squeezed on.
Also a nice veggie platter with hummus, olives, pita chips, etc.
For dessert you can do a baked fruit crumble if you didn't do grilled, or a chocolate cake or whatever.
