What to serve on Christmas Morning?

Nope - its a recipe from Bisquick. Three cups of Bisquick, 1 pound of breakfast sausage (I use Jimmy Dean Hot) and two cups of shredded cheddar cheese. Form into a dough then roll into balls. Bake at 400 for about ten minutes. YUMMY! :goodvibes

We always go over to my dad's for Christmas morning, and my stepmom makes a bagel buffet. It's really good--warm bagels of several varieties, cream cheese, lox, fresh fruit, vegies (I always put cream cheese and sliced cucumbers on my bagels), etc. It's hard to get a sit down breakfast when we're opening presents and also, we have a huge prime rib dinner in the afternoon. I like the bagels/vegies/fruit idea because it's enough to tide people over till the big dinner, but not so much as to ruin it.
 
I get Sister Shuberts rolls (cinnamon and the kind with sausage in the middle) and make cheese grits!
 
Could somebody post a hash brown breakfast casserole recipe? That sounds like a great idea. I would love to not be cooking at the stove frying eggs while everyone else is eating!:santa:

This is my hashbrown casserole recipe that I take everywhere - breakfast, lunch or dinner. You would not find it by searching for Hashbrown Casserole because I think it is actually called Country Potatoes or something like that:

1 bag of frozen Southern Style hashbrowns
1 can cream of chicken soup
small container of sour cream
3/4 cup shredded sharp cheddar cheese
1/2 cup chopped onion (I usually use a little more and chop it the same size as the frozen potatoes)
1 stick butter, melted

cornflakes, crushed (I use almost 1/2 of a bag from a small box)
butter, melted (the original recipe calls for only 1/2 stick, but I use another whole stick so that I have enough topping to cover the entire casserole)

Mix all of the first ingredients together and place into a 9X13 dish. You can do this the night before and refrigerate, but it only takes 5 minutes to do it in the morning. Mix cornflakes with butter and put on top. You would need to
do this part in the morning other than the crushing of the flakes. Bake at 350 for 1 hour. You may need to cover with foil about half way through to keep the topping from getting to brown.

I sometimes crave this and can eat the whole thing in a couple of sittings. It is that good. Enjoy!
 

I always make the standard baked french toast posted previously ....with a couple substitutions....In place of 1 cup of the milk or half and half I sub in 1 cup of blender bureed ripe bananas, and instead of pecans , I use chopped walnuts. It's my families favorite....
I have also been known to use EGG NOG instead of milk or half and half....mmmmm so good!

I was actually thinking the Bread Pudding from 'Ohanas. Do you think it would taste OK if I left out the rum? I realize the alcohol evaporates but a cup of rum for the family on Christmas morning might be a bit much :rolleyes: .
I figure I could toast the bread ahead then take it from there...

Ingredients

5 eggs
3 cups whole milk
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 cup sugar
8 cups french or 'Ohana breakfast bread

1. In bowl mix eggs, milk , salt, sugar and nutmeg. Set aside.
2. Cut bread in medium pieces, place on cookie sheet pan put in 350 degree oven.
3. Bake bread until lightly toasted, about 15 minutes. Remove bread and place in egg and milk mixture.
4. Place mixture in a greased 10-inch cake pan and bake at 325 degree for 1 hour.
5. Let stand 5 minutes, serve hot with ice cream.

BANANA FOSTER SAUCE
4 oz sugar
4 oz brown sugar
4 oz corn syrup
4 oz unsalted butter
1cup heavy cream
1 tsp vanilla extract
1cup spiced rum
1cup banana slices

1. Combine sugar, brown sugar, corn syrup, butter and half of heavy cream in a large pan. Bring to a boil and slowly add remaining heavy cream keeping mixture at a steady boil.


2. Add spiced rum and flambe.

3. Candy will brown slightly; cook 3 minutes until candy forms into a firm ball in cold water. Remove from heat and add vanilla. Add sliced bananas. Serve warm
 
Usually by the time we eat all the chocolate out of our stockings, we are too full for breakfast!! :lmao:

Right after that, I make dip and the brunch usually consists of Tostitos and dip!

Way to start off the day nutritiously!!

I actually make mine a bit different, I think everyone has their own take on the recipe :)

I mix two pounds of Tennessee Pride Medium spice sausage, a jar of cheeze whiz salsa cheese and then add enough bisquick that it's not a sticky mess anymore :) I mix it all by hand (like meatloaf) and then you place little balls of this mixture on a baking sheet and bake at 350 for about 10 minutes (really depends on how big you make them). They are soooo yummy.

According to the recipe the alcohol is used to make a flambe, which will change the nature of the sauce. I don't know of a way to do a flambe without an igniter of alcohol. Perhaps someone else can come up with an alternate way to get the same affect without flambe-ing at all, but I don't know of a way to both reduce and get that same taste at the same time.

That being said, a flambe really does burn off the alcohol if you let it burn out, so a whole cup or not, it wouldn't be a concern -- it doesn't really soak into the food as long as you ignite it quickly enough:

"Once you add the liquor to the pan, do not delay lighting. You don't want the food to absorb the raw alcohol and retain a harsh flavor. Ignite with a long match (such as fireplace matches or a long barbecue lighter). Always ignite the fumes at the edge of the pan and not the liquid itself. Never lean over the dish or pan as you light the fumes.

Let cook until flame disappears (at this point all alcohol has burned off). If you want to retain some of the alcohol flavor, cover flaming dish to extinguish flames or add additional wine or stock.

Do not pour liquor straight from the bottle to the hot pan. The lit fumes can follow the liquor stream back to the bottle and cause an explosion. Pour the needed amount into a different container, warm it, and then add."

Personally doing a flambe just isn't something I'm comfortable doing in my own home (maybe in an outdoor kitchen)...and certainly not on Christmas morning with a house full of people. But I'm a big chicken ;)

For breakfast, I do oven scrambled eggs and a pre-purchased coffee cake from a local restaurant. They are $16 and FANTASTIC. Been a tradition for years. It's a bundt almost pound cake denseness with pecans brown sugar in the middle and powder sugar on top....mmmm.

And fruit. And COFFEE for me!

We have the WHOLE family at noon...still need to plan that meal out....it's typically more coffee cake [it's that good!], lots of snacks and lunch meats, breads, etc.

I make a cheese omelet with Bisquick biscuits hot chocolate, and coffee.
 
We eat the candy Santa brings, for Breakfast.

No, you do not cook it first. You mix it raw with the other two ingredients. They are so good. I make them every year, too. I would suggest making two batches, though, as they go fast. You can mix them up and put them on the trays, covered, in the refrigerator and cook them the next morning. Oh, and I always use Tennessee Pride HOT sausage.
 
No body seems to have the same Christmas morning tradition as we have.
We start the morning with mimosas!! (champagne and orange juice)
While the kids are opening their stockings DH and I are having a toast to Christmas Day.
I will also serve sausage links and cinnamon rolls.

I actually do cook the sausage first - less fat. But it can be done either way.
