What to do with leftovers

So Turkey day is over - any unique uses for the leftovers?

Yeah you can make sandwiches with turkey, stuffing, gravy and cranberry sauce. etc

One I heard about a few years back and now do all the time is making waffles with the leftover stuffing.
They come out amazing and you get lots of crispy bits.
We use them for an open face sandwich - so put the turkey, gravy, cranberry etc.. on top.

We also now make way may stuffing then we need so we are sure to have enough for waffles the next day.

My son and grandkids are coming for the day so they will help eat all the leftovers. I do like turkey sandwiches but that's the only thing are make with the leftovers, other than just heat them up again and eat them.
 

After an 18 lb turkey and sides...I have enough leftovers for one dinner. The kids and guest were discussing if 4 plates were too many yesterday and just demolished my food.

That said, I'll make stock today and my sweet potatoes (since the stuffing was gone - 3lbs didn't make it one meal, and we only had 7 - but boys in their teens and early adulthood just eat). Anything that makes it through today (and it won't be much) will go into our lunchtime leftovers Thanksgiving soup tomorrow (yep, anything left goes in, but it all kinda works). I have extra veg for the soup in case I have nothing left but today's broth, which is possible.

I used to make turkey tettrazini b/c it was my spouse's favorite. But, now I can't do dairy and the leftovers don't last...but it's great for turkey and if you have extra mushrooms you bought that didn't go in the green beans...

Just the usual sandwiches. My aunt likes cold mashed potato sandwiches with mayonnaise, and I tend to go for the traditional cold turkey sandwich crammed with all the stuffing and cranberry sauce on seeded rye bread.
 
We have another Thanksgiving dinner on Sunday.
Freeze the remainder of the turkey.
Throw out the rest of the sides, by that time I’m over it and done with them.
 
We typically all just want sandwiches. But, in past years, a favorite was a layered hot dish of potatoes, stuffing, veg, turkey, covered in cheese and gravy. Baked until hot and bubbly and a little crispy on bottom. My kids adored it.
 
Boring on this end. Using the carcass and some extra giblets to make stock. Will follow that with a pot of turkey pot pie soup using mostly green leftovers and some fresh carrots. Didn’t pick up leftovers from my sister so a nephew will drop some off on Sunday.
 
We just eat the same thanksgiving meal over and over until it's gone. We make so much food, it will last us several days. We don't get tired of it really, this is the only time of year we have most of the items. It's really nice after all that cooking over the last couple of days that all we have to do now is pull things out of the fridge and reheat them.

Not over for those of us who have family members who had to work yesterday. Our Thanksgiving will be tomorrow. If we planned properly, there won't be any leftovers because they were all consumed at dinner, or sent home with guests..
 
We will have turkey again as a meal just like we did yesterday. If we still have extra/white meat - another meal as a sandwich (Turkey salad/w/mayo). Any extras most likely will get tossed (hate throwing food out). If we have too much of the sides, mashed potatoes, stuffed mushrooms, stuffing, etc., I will freeze for another meal/time.

There is usually so much, each of the kids take enough for another meal also.
 
We have never been part of the turkey sandwich leftover crowd. I typically just make plates identical to what I'd eat on Thanksgiving. My husband loves rice (which we normally do not make on Thanksgiving). So he usually has his turkey and gravy over rice in the days following the holiday. I have been known to pair the turkey and gravy up with pasta and cheese...so basically, Turkey Mac.

One year, we made a "lasagna." It had layers of turkey, stuffing, mashed potatoes and green beans as well as some cranberry goat cheese and some grated parm on top. I put some gravy on it when plating. I really liked it, but the rest of the family was mixed.
 
My husband asked me to try to make leftovers eggrolls. I will venture out tomorrow and get some wrappers.
Other than that we just do the usual....Both the turkeys are currently cooking down for soup and the leftovers are crowding the fridge. We'll have them tonight and maybe tomorrow. I'll probably make some potato pancakes w/ leftover ham tomorrow.

this is similar to what my family enjoys (i'm not a big fan)-layered stuffing, turkey, green bean casserole, sweet potatoes, gravy-topped with mashed potatoes.

dh will carve out the rest of the turkey today and i'll make a few of these in small freezable containers along with one for tonight, one for my oldest to take home. we'll keep some turkey out for traditional left over plates, some turkey will get frozen in 1'ish pound bags for a soup mix i have.
