what to do with eye round roast?

I make a tent of aluminum foil and put onion soup mix and can of mushroom soup and one cup of water.....mix those three together and pour on roast......then make the tent on top.....cook and use that gravy mixture for the potatoes...it is delicious and you can cut it with a fork.....I need to pick one up tonight now.....

Ok, I know it is winter but, for future warm weather reference:
I'm not much on roast beef but, my dad use to wrap an eye of round roast w/bacon put it on the bbq spit and rotissierre it for a couple hours. that was the best darn roast EVER!
