What to do with beets?

DH bought some beets at the farmer's market last weekend. I think he was trying to be funny since we're fans of The Office. So, what do you do with fresh beets?
 
Peel them, cut in chunks, toss with olive oil, salt & pepper and roast in oven until fork tender (425 for 20-30 min). You could also prep them like this, wrap in foil and put on the grill.

Either peel them under running water or put some plastic down because they're very juicy and it can stain.
 
Peel 'em, slice 'em, cook them through and then put 'em in the fridge in a sealed bowl covered in vinegar sweetened with Splenda for a month.

Then I'd eat pickled beets.
 

The thought of popping one of your beets into my mouth makes me want to vomit.

Wash them well, cut off the tap root and all but 2" of the greenery (why I don't know, but these are the directions I read the first time I grew beets) and then boil until fork tender like potatoes. Drain and cool, pinch the skins off, then slice. I eat them just like that. Lovely. For my husband, I put them in a bowl with sliced onions and vinegar and let them sit for awhile. They never make it a month, he eats them the same day and for as many days as they last...which is never very long.

Be prepared for colorful...ummmm....end results. :rotfl:

I never heard of roasting them, now I'll have to try that!

You can also cook them, cool them down, and use them in a salad--they are particularly good with fresh watermelon, goat's milk cheese, toasted nuts and vinaigrette dressing.

Really? How are they? My oldest is a greens lover. She recently "discovered" collards (not really a Washington thing, generally) and loves them. Might have to tell her to try the beet greens. We usually just feed them to the chickens.
 
Bring them to me!!! Then I will slice and boil them until fork tender and serve them piping hot with some butter and salt.

Lucky chickens! Beet greens are the best. When we were kids, none of us would eat beets but we'd fight each other over the greens. There's a farm market down the street from me in the summer and the farmer will often save the beet greens for me because so few people actually eat them.

Now I love beets, too, and often just boil them or roast them. Roasted beets are lovely with some feta cheese, as well.

Also cut really thin, oil and season and roast until crispy. Beet chips. Everyone who tastes them love them.

I had them in a salad once and they were really good. They aren't something I would purposely pick up but if I had them I'd probably do that with them. I didn't see the episode of the office you must be talking about but boy are beets popular here in Pennsylvania. I always see boiled eggs floating around in beet juice to make them purple so I guess you can try that if you want to be authentic. I've never had one though so I can't vouch for taste one way or the other.

I do the plain old boiling method, too. But it takes a lot of boiling. This time of year, that's no fun. I use the crock pot instead. About one hour on high. Less steaminess.

I love the idea of roasting, though. Next time!

I ate at a Lebanese fast food restaurant one time. I know this sounds crazy, but in Montreal we found a chain restaurant called Basha and loved it. Anyway, they served a salad which included what I think were beets. I don't know what they did to them, but they were fabulous. 2 points for anyone who might have an idea!!

Oh and one more thing about beets, especially if you haven't made them fresh before.....just kinda be prepared the next time you use the restroom. No matter how often I eat them, I'm always shocked at the *results* for a split second. :laughing: (please...no tag!)
