What to do with beets?

I didn't think I liked beets until I spent a few weeks in Russia. They are not bad when they are prepared well. A couple of my favorite dishes were "viniagrette" (a cold "salad" like you'd serve at a picnic...very pretty and tasty too) and borscht.

You don't cut all the tops off because they will "bleed" and not be the pretty red beet color.

And after you have cooked the beets you save the drained water and mix with jello and get beet jelly (don't remember the recipe). It was easy to make, tasted like the real jelly - the kids loved it
