Depending on how long your stay is, the pool likely won't get old. But it can certainly close due to bad weather. (I dislike that pool myself because it's so popular and crowded, but my kids love it) Other things to do is that you can walk 5 minutes to Swan and Dolphin after the sun is gone. They have a big playset there, good for ages 5-12 I think, and a beautiful sandy beach next to a stunning lake. Nearby is also the Fantasia Mini Golf, a very cool golf course full of Disney designs. (It was closed last month when we were there.) You kids will enjoy that. Be sure to ask for the Disney course, not the regular green course with nothing Disney inside. And be sure to do this after the sun is low, or the playset gets burning hot.
Yes, eating one Cape May breakfast is a must. The food is pretty good, and the Characters are also good. If you plan for a later breakfast, like around 10:30, the restaurant isn't so crowded and you get more Character time. Well, but I don't know about Spring Break. Even then, eating breakfast at Cape May is worth it on a non park day.
