As noted, you're committed to something after 11:30 if you're planning on using the Onboard Airline Check in program.

Beyond that, my comfort zone is nothing before 1:00.

i've done 1230pm and was bored
we decided to fly out the day after
and now we always go to Disneyworld hotel for 1 day to chill at the hotel. Then fly out at our leisure the next day.

To me, it depends on what airline your flying and checking baggage. The first time, we flew Southwest, so we did not have the option of onboard check-in/send bags straight to the airport, and we ended up waiting 30min to check our bags at the airport. We also did the sit down breakfast, so we didn't leave the port till 9am, so we arrived at the airport when it was busy. This last time, we flew Delta, so we had onboard check-in/send bags straight to the airport and we had over 2 hours to kill at the airport as we got to bypass the baggage line. We did Cabanas for breakfast, so we were off the boat at 8am and at the airport by 9am.

If you fly on Southwest again, use the curb side check-in. It's a lot faster.

We are looking at one of the local limo companies that will hold our bags for the day. Flights to Alaska tend to leave late in the day anyway so we are looking at having the company hold our bags while we tour the Kennedy Space Center.

What time is everyone off the ship by? Like if we want to dawdle around and take a few last minute pictures? When is the latest we can leave the ship?

I don't think there is a NOT busy time at MCO until around midnight - if it even gets quiet then. I've always seen it crazy chaotic - and I've come and gone at all hours of the day.

You must be out of your room by 8:00 and off the ship by 9:00. Although there are usually a few stragglers that the CMs have to start coaxing toward the big exit door at that time. Just remember they need time to get the ship ready for the next group of cruisers. And they want to be on "as soon as possible".
