I would choose the first week or two of December! The crowds are at their lowest, the weather is great and the parks and hotels are so beautiful all decked out in their holiday best! Very magical indeed! I love the parks during Christmas.
I'm going to pick very last few days of September going into the first week of October. It's still really warm--- can go swimming and enjoy the water parks. The crowd levels are really low. Also, by staying into the first week of October you can enjoy MNSSHP and the food and wine fest.
I would choose mid - to late September or early October. That's the time frame we used to go all the time, until our boys got older, making it more difficult to take out of scholl for a week. Low, low crowds. weather still warm so you can enjoy the water parks. The parks close earlier, but with the lack of crowds we always walked on everything, so we got in more in a shorter time.
I am so glad so many are liking October! We have a trip planned for October this year, it will be our first October visit! We are really looking forward to Food and Wine Festival!
