I want to book a 7:30 ADR for Ohana breakfast and I was wondering what is the earliest the buses run to Mk so we can hop on the monorail.

I believe the earliest bus is the 7:30am bus.
We were on that, and it first stopped at WL to let people out, then to Contemporary, then to the MK, then was continuing on to Poly and GF.
It will only stop where people actually need to go that morning. I would say if you want to get there for 730, grab a cab.
We grabbed a cab to the GF for a breakfast one day and it was $15 plus tip, and there was a bit of traffic. At that time of the morning it might only run about $10 to the poly.

I thought the resort buses only go to the parks, not to each resort.

At that time of morning, the busses sometimes will make a few more stops to pick up other early riders since the parks are not officially open yet. If you really want to get to Ohana by 7:30AM from POP, you may do better driving over (or take a cab) to the TTC yourself and taking the resort monorail or walk to the Polynesian from the TTC.

I am not sure how long ago you took the bus that took you to the resorts, but the buses only go to the parks for the breakfasts now. Sometimes, you might get a nice bus driver that will stop at the CR before going over to the MK but you can not count on that.
For an ADR at 7:30 I would not count on the buses or monorails...unless the MK is the EMH park that morning. Even then you'll have to get the bus to the MK and then the monorail over to the Poly, you'd have to be to the bus stop at the POP around 6:30 or 6:45.
I'd take a cab.
