Just general things I've noticed in my many trips to DW and DL...
-Speak to the CMs, they've ALWAYS been nice and helpful. Many of them also seem to be more than happy to share Disney facts and info. Maybe not psychology directly but I find this a refreshing change from normal life where people are less than enthused when you ask a question or try and strike up a conversation. For us, that's part of the magic.
-I notice people--as a whole--tend to be a little nicer and a little more polite than in the, "real," world. Of course, there are always exceptions, I'm talking generally here.
-Don't know if this is intentional or not but all of the water/waterways in the parks are certainly soothing. There's just something soothing about water. Of course, being in the middle of FL may have something to do with it as well...
-I find the different storylines for each area/attraction which have been handed down/changed over the years by the CMs to be quite fun. Gets me in the mood for HM (for instance) with their, "attitudes," there. Not like pretty much all other theme parks where you get on line for a ride, wait, check out the pretty things they may have put there to occupy your time and then get on. With Disney, they try to keep you totally immersed in whatever fantasy you're supposed to be experiencing. That's why there are plenty of parks with better rides but we always go back to Disney.
-They just get it right. How many stories have you heard of something going wrong for a guest and the CM just made it right without the guest having to make a big deal of it. This is customer service at its finest. They just make it right.
That's about it for now.
Oh, and you can (or could) get a CM out of character. We did the KTTK tour many moons ago (when they still gave you the pin which looked like a key) and our guide was great. When she took us to the utilidoors, she stopped in the stairwell and said, "Ok, I'm offstage now, you can ask me anything you'd like about life as a CM." She was very straight and honest with us. Was interesting. She didn't have bad things to say, btw. I'm guessing they do control that as well.
