Paradise Island/Nassau itself doesn't have many touristy spots throughout the island. Atlantis is the big draw there. Be careful because many parts of the island aren't very nice looking. Outside of Atlantis, you could go to the straw market, although that is one big, hot and sweaty flea market where the vendors will be screaming at you from all directions. They do have a pirate museum and small fort on the island of Nassau. (Nassau connects to Paradise Island by a bridge). I would probably spend most of the time at Atlantis. When we have gone, we have stayed at the Atlantis Resort, but I think that non guests are able to buy day passes there (not 100% sure). At Atlantis, you have an amazing water park experience (better than Blizzard Beach or Typhoon Lagoon).The aquariums throughout the property are incredible - the best I have seen anywhere. They have some species there that you cannot find in any other aquariums. They do have a nice shopping village with street entertainment adjacent to the hotel (prices there are actually not too bad for souvenirs or dining). On the hotel grounds you can get spa treatments, go to a show or play in the casino. They even have a movie theater in there. They have a beautiful beach and all of the beach activities you could think of - jet skis, banana boats, etc. They also have a new dolphin swim and interaction program there (haven't personally done that one. We've done Discovery Cove in Orlando). I'm probably forgetting things there, but you could probably split your entire vacation time between your resort and Atlantis, and leave happy and satisfied.
