Not sure where you got them. One difference between the North and South in the US is up North we have them sweeter than they do down South.
Here is a simple recipe
Corn Muffins Recipe
4 tablespoons butter
4 tablespoons sugar
1 egg (beaten)
1 cup corn meal
1 cup plain flour
4 teaspoons baking powder
1 1/4 cup milk
Cream together butter and sugar.
Stir in remaining ingredients.
Blend well.
Spoon into buttered muffin tin. (one dozen muffins)
Bake for 20 to 25 minutes at 375ºF (190ºC)
