What light dishes and desserts are you serving for Easter?

I wanted to have a ham, but the sodium content is through the roof! I don't know what I'll have instead. Any suggestions? I'm thinking that one over. I'll take suggestions and recipes for light veggies and desserts too. :)

What are you serving that is light in calories, high in flavor? Help!
 
I will be having a part for my daughter around Easter. We´re serving a light meal/finger food. I will be making chicken sticks with satay and chicken sticks with sweet and sour sauce. I´ll also be making 2 types of mini-tortillas (with cream cheese and smokes salmon and mexican salsa, salad and cheese), 2 types of bruchettas with (fresh Mozarella, basil and tomato; red pesto, parma ham and Parmigiano), little meat balls and bbq sauce and lots of veggies, fruit and an assortment of cheese´s.
 
We are having spiral ham so I can't help there, I love it too much to go without it :)

We will be having asparagus - roasted in the oven with a little olive oil, salt pepper, and a little lemon zest

And our new favorite appetizer - spinach and mushroom crostinis

Take thinly sliced baguette slices and toast under broiler, meanwhile in a saucepan heat 1 TBS olive oil, add 3 cloves of garlic cut into slivers. Heat for about 2-3 minutes over medium heat, discard garlic. Add one medium chopped onion and 1 cup of sliced mushrooms to the oil, saute til softened. Add 1/2 lb fresh baby spinach and saute till wilted. Add 1 TBS balsamic vinegar, saute. Season with salt and pepper. Place on crostini and consume :)

You can alter to taste, that is just my basic recipe. My DH and kids (minus the two little mushroom haters) LOVE it!

Dessert we will be doing a blueberry/lemon cheesecake thing from Kraft foods, using the lighter ingredients.
 

Here is one of my favorite desserts. It is from Weight Watchers. but very tasty and good for Easter. It is Eclair cake.
Chocolate Éclair Cake

Ingredients:

Low Fat Honey Graham Crackers- 1 box

Fat Free Sugar Free Instant French Vanilla Pudding- 2 small boxes

Skim Milk- 2 cups

Fat Free Cool Whip- 8 ounces

Chocolate Frosting - 1 container

Place a layer of the graham crackers on the bottom of a 9 x 13 pan. Next mix the boxes of pudding with the skim milk as directed. Fold the cool whip into the pudding.

Spread half of the pudding mixture over the bottom layer of graham crackers. Add a layer of graham crackers to the top of the pudding. Add the other half of the pudding mixture on top of the graham crackers. Top this with another layer of graham crackers.

Microwave the chocolate frosting for about 10 seconds in order to soften it. You want the frosting to be liquefied. If 10 seconds is not enough, stir frosting and warm again for 10 second. Stir the frosting and pour over the top of the cake.

Place the cake in the refrigerator overnight. This will allow the graham crackers to soften. If you do not have time to let it sit overnight, make something else. You will be sorry if you do not let it chill overnight. The graham crackers are too hard to cut if not chilled.
 
We too, are having ham so I can't help you there.

For some side dishes, we're having...

mashed potatoes and ham gravy,
steamed broccolini and fresh green beans with a light salt and pepper sprinkle,
and some kind of romaine or spinach salad.
 
Thank you for the ideas and recipes! :) I might see if I can find a lower sodium ham. I love ham and I would like to have some for Easter.
 
Best desert ever..and light. Make an angelfood cake...tear into pieces and put into a 9 x 13 cake pan. Take a box of lemon jello (the old fashioned cookd is the best, but sugar free instant is good too) pour over the cake and top with cool whip...very light and refreshing...yummy too
