What kinds of cookies, or other baked goods, will you be making for the holidays?

I'm making;

Apple Oatmeal Cookies
Rum Raisin Cookies
Orange - White Chocolate Chip Cookies
Gingerbread Cookies
Eggnog Thumbprints
Peanut Butter Chip Cookies
Fruitcake

And I want to do some kind of cookies with chocolate.

Dark chocolate dipped Oreo's
Oatmeal apple raisin
Gingerbread
Sugar
Buckeyes (well not technically a cookie, but it'll fit)
Snickerdoodle
Mexican wedding

Are your friends and family really excited to get the home baked cookies? No one I know wants home baked sweets of any kind for the holidays. All the goodies I've made the last few holidays went uneaten. Seems everyone I know is trying to eat "healthy" and can't be talked into "sweets". And no, it's not my awful baking! :scared: This is a rather new phase with people I know.

My grandmother always trys to send home leftover cookies with us when we leave her house, since she doesn't like to eat a lot. Other then that, no, I haven't noticed that.
 
Eggnog Thumbprint Cookies

(Though be pre-warned that this is a new recipe for me this year, so I have no idea how well this recipe works.)

2/3 cup Butter
1/2 cup Sugar
2 Eggs, seperated
1 tsp Vanilla
1 1/2 cup Flour
1/4 tsp Salt
1/8 tsp Nutmeg
1 cup Walnuts, finely chopped

Cream butter and sugar, beat in egg yolks and vanilla. Stir in flour, salt, and nutmeg. Mix well, chill one hour or until firm.

Whisk egg whites until foamy.

Shape dough into one inch balls, dip in egg whites, roll in walnuts.

Place two inches apart on cookie sheets. Make 1/2 inch dents in center of cookies with end of wooden spoon handle.

Bake at 350 degrees for 10-12 minutes until center is set.

Cool.

1/4 tsp Rum
1 - 2 tsp Eggnog
1 - 2 drops Yellow Food Coloring (Optional)

Combine all, using enough eggnog to give it a spreadable consistency. Tint with food coloring if desired. Pipe about 1/2 tsp of filling into each cookie.

2 tsps Baking Powder
1/4 tsp Baking Soda
3/4 tsp Salt
1 tsp Cinnamon
1/4 tsp Ginger
1 cup Dried Apples, diced
2 tbsp Apple Juice Concentrate
1/2 cup Butter
1 cup Brown Sugar
1/2 cup Sugar
1 Egg
2 tsps Vanilla
1 cup Raisins
1 cup Walnuts

Combine oats, flour, baking powder, baking soda, salt, cinnamon, and ginger.

Mix apple juice concentrate with dried apples.

Beat the butter with the sugars until combined, add the egg and vanilla. Add flour mixture slowly until blended. Stir in apples, raisins, and walnuts.

Drop dough by tablespoons two inches apart on greased cookie sheets. Flatten slightly.

Bake 11 - 13 minutes at 375 degrees until golden brown on the bottom.

Cool

Two things that aren't officially in the recipe that I personally like to do, toast the oats, it gives them more flavor, and sprinkle some cinnamon sugar or colored sugar on top of the cookies before baking.

I usually don't give them away - people used to beg me for my cutout cookies - but they don't mail well and I'm not nearby to give them in person anymore.

I use them for entertaining, and they always get eaten. My sister has asked me again to bake cookies with her. She does make up gift packages. She has very little money, and this is one way that she can reciprocate with her friends at gift time.

But about 10 years ago I took a plate (not a huge platter) of cookies to my church office. One of the older women in the office teasingly (I hope) told me that I was awful to do that. I never did it again though.

I make:
Lemon shortbread
Russian teacakes
Cranberry, vanilla, and orange layered cookies
Chocolate chip meringues
Sugar cutout cookies (very different recipe than most)
Candy cane cookies
Fudge
Pralines

The only baking I am doing this Christmas will be cheescakes..I am making Oreo cheesecake, Apple Caramel cheese cake and Brownie swirl cheesecake to take to the parties..no cookies except the kind that comes in squares ready to bake. I just get tired to easy this year lol..
 
I love to bake and try to make something new every year. This year I plan on attempting meringues. I've never made them before so hopefully they turn out well.

For the cookie swap at work, I'll be baking chocolate cream filled cookies (think like a little whoopie pie)

For Christmas.....

Oreo balls
Buckeyes
7-layer bars (this is DEMANDED of me to make at the holidays)
I'll also make a cheesecake.

This is all I'll make. Although I'm sure my mother and SIL will make something to bring to dinner also.

For the cookie exchange I'm having I'll be making my grandmother's coconut shortbread cookies.

Otherwise I'll be baking

Peanut butter w/Hershey kisses (these are a special request from my 2 brothers)
Oatmeal raisin
Chocolate chip
Sugar cookies (the kids have to make their cutouts to leave for Santa :rotfl: )

And I'm thinking of looking for a new cookie to make, but I'm not sure what to do, so I'll be stalking this thread for something that sounds good.
 
I don't plan on doing that many cookies, mainly just peanut blossoms (with the Hershey kiss in the center) and maybe coconut thumbprint. I will order 3 dozen cut-out cookies from the cake and confectionary shop in town like I do every year. They make wonderful, elaborately decorated cut-out cookies. I hate making them, all the mess and the fuss, it's just easier to order them. :)

I will also make homemade fudge and peanut brittle. And pumpkin rolls, can't forget those. And if I'm "in the mood" to make anything else, then I will, but those are the things I do plan on making at this point.

I will be making mint sticks, creme de menthe creams (can you tell I like mint? ;)) and viennese fingers.

I will mostly bake cookies to give as presents to my friends, I hope I get to keep some for me too!:rotfl: So keep the ideas coming!
