What is your 1 "dont miss" attraction at MK & Epcot?

There are actually two that I can't wait to ride because they bring back childhood memories. The first is Journey into Imagination with Figment. My mom, sister, and I went to Epcot the first year it opened and rode the original Figment ride. I loved Figment (and still do). My mom, my husband, and I went again in 2002 and rode the current Figment ride. I still loved Figment after all of those years.

The second is the Haunted Mansion. I loved that ride when I went in 1984 and 2002.

I also can't wait to ride Buzz Lightyear, Space Mountain, and Splash Mountain

In MK don't miss THE Haunted Mansion I just love it and I notice something different each time

In epcot Ill echo Soarin It used to be Mission space or test track but soarin is amazing be sure to try the top middle row that way you dont see any feet or sides of the screen and it feels like you are the only one there

I haven't been to the Epcot version yet, but I've been on the DL version of Soarin' Over California. It's a definite don't miss. Having been on most of the other don't miss rides at WDW, I'd say that I can't think of one that I'd rank above Soarin', except for the Tower of Terror, which I think may be the best conceived thrill ride I've ever been on anywhere.

MK is interesting. I actually don't think there is a true "don't miss" there, except maybe just sauntering up main street. There's no ride I've been on every time there. Maybe Dumbo if traveling with a preschooler. My favorite attraction there, when it's open, is Timekeeper.

Other than that, I'd say the only absolute under-no-circumstances can you miss them attractions in the world are the AK safari and Fantasmic. Space Mountain and Rock and Roller Coaster if you're into roller coasters.
