Not planning on going later in my trip. With a 13 or 14 hour time difference (daylight savings time means it varies for me), I was so wiped out with jet lag sometimes even with all the excitement.

We're planning a two week trip to Japan, with plans to do 2-3 nights at TDR. We will likely be flying in and out of Tokyo, so I was thinking we'd either do Disney at either the beginning or end of our trip. That said, I was debating which was better.
- Do Disney Tokyo at the beginning of our trip, and just deal with the jet-lag, or
- Do Disney Tokyo at the end or our trip - no jetlag but the family may be tired at towards the end of a two week vacation together.
Sounds like your vote would be do it at the end of the trip.
The other option I guess is to do a couple nights in Tokyo, then go to TDR for 2-3 nights, and then off to other areas of Japan before returning to Tokyo.
About how long did it take for your jetlag to wear off?

However, I do think the very beginning is not a great idea. I'd vote for either end of trip or taking a couple days to get to adjust and then do TDR. Tokyo has the advantage of there's always something going on, and it'll bring you up-to-speed on understanding how things work (generally) in Japan. That should dampen the culture shock of Disney being not an American experience at all in Japan. (Even though you know that intellectually, you may have some surprises in how things really go in Tokyo Disney).
My trip last month, I changed over in about 4-5 days, but have had a horrible re-entry into my real life -- basically took a full 2 weeks to go back in time 14 hours. Cooking a steak at 4 am on day 10 back because it was 6 pm in Japan was a lot of fun.
What did you want to do on your 2nd day?Not doing a second day at Disneyland, there's just simply way too much to do there.
I regret not doing our two dinners outside of the vacation package. Both of the dinner in Disneyland (Blue Bayou) and Disney Sea (some Italian place I can't remember) were very mediocre. With the vacation package, you get a very limited menu to choose from and they were both disappointing. Next time, I would make regular dinner reservations instead and be in a position to pick anything from the menu. I would also avoid the Italian place completely - I don't think I have ever had worse Italian food.
We had 4 park days and we used them to their fullest each day, 2 days at each. I regret never checking out the Ikspari area or hopping over to see the other TDL hotels. I would have liked one more day to just check out the resort area as a whole without going to a park. Best thing we did was go to TDL at the end of our 14 day stay in Japan, we were kind of shrine and templed out and just had Disney fun. Plus, we bought the most souvenirs from TDL too so we would have had to lug it all around with us on the trains if we would have gone there first.
There’s just way too many things to do within a single day and take it all in. Would have been nice to enjoy the beauty of the park more.What did you want to do on your 2nd day?

Pre-pandemic, they were one of my favorite table service places. Post pandemic, the appetizers and pastas have been very hit or miss. For the Fantasy Springs opening set, I liked the dessert but was not a fan of the other things in the set.
My post-pandemic table service favorite at Disneysea is now SS Columbia.
Is there anything special about the Disney Store in ikispiari? Worth a trip? Or more then enough stuff to buy in the parks and hotelsYou’re not missing much with ikispiari honestly. It’s basically just an indoor shopping mall.
