What goes with Apple Chicken Sausage?

I have a huge secret fangirl/nerd side that I've just recently become comfortable showing

Apple-chicken sausage usually has a very delicate flavor, so I don't serve it with anything that would overpower the taste. Usually I grill or pan-fry the sausages and serve them with vegetarian ravioli (lemon/ricotta, butternut squash, etc) with a drizzle of browned butter sauce. Maybe serve broccoli or just a salad on the side.

Well, I ended up returning it. It was Trader Joe's brand, but I guess theirs was recalled too. I got an Italian chicken sausage from Whole Foods instead & it was delicious! I sauteed some onions, red peppers, mushrooms, & the chicken sausage & added it to whole grain spiral pasta & light alfredo sauce. Even my picky toddler ate it!

Just grilled some over the weekend and served with homeade applesauce and grilled potatoes.
