What do you make with boneless, skinless chicken breasts?

I need some new ideas. I usually marinate and grill them, but I'm getting tired of that. I posted on the Cooking/Crafting/Scrapping board, but didn't get much feedback. Too many scrappers not enough chefs. :teeth:
 
I like to use Italian dressing, then bake them. Served with mashed potatoes, it's yummy!!

Also, cut them into pieces, cook til no longer pink, cover with cream of chicken soup, let simmer, then add cooked rice right before serving. :lovestruc
 
I like to stir fry chicken breasts with various veggies. I use a spicy Chinese oil, season later with soy sauce and serve with rice.

Another good one is chicken and dumplings particularly when it's chilly. You really just make a thick chicken soup (another option!) and then drop dumplings in the broth.
 
Sandy, I had the same question a few months ago and someone posted a great recipe. It couldn't be easier. I am not sure that this is exactly what she posted but its what I remember and what we had last night. Place the boneless chicken on the bottom of a pan. I have a big family so I use two cans of the diced, seasoned type stewed/canned tomatoes. I didn't have balsamic vinegar and olive oil so I used 1/2 of balsamic vinegrette dressing. Added in some Italian seasoning, sliced some onions on top, covered with foil and baked about 45 minutes or so. Take the foil off, and I drain some of the juice but you don't have to. Top with shredded mozarella cheese and its excellent. The best part is, it takes 5 minutes to put together. I think "Southern" somebody posted that recipe.
 

If I am in a hurry, I just put the chicken in a pan, and just before they are do ne, I put a couple of slices of pre-cooked bacon, a can of mushrooms and some shredded cheese and let melt...ta da, smothered chicken. Add some rice as a side dish...couldn't be easier.
 
Cook the chicken, in a seperate pan add Red Hot and a little butter, once chicken is done cooking, pour the Red Hot over chicken and serve with chicken flavored rice or my favorite, Pasta Roni. Really simple, really good!!
 
We love those 30 minute marinade sauces and then grill them. We also cut them up bite size, brown them and toss them in a pan of Lipton mushroom rice. It is an easy way of making chicken and rice that I used to make when I did childcare in the home. It was easy and everything was already cut up for each kid.
We make chicken tacos, and actually prefer them to beef. We also do a mexican pizza using the soft tortilla shells and refried beans and then everybody gets to top theirs how they want. Mine are heavy on the green onion and super light on the cheese. :thumbsup2
They used to make a Shake & Bake for chicken breasts. We haven't seen it in years now and miss it a lot. It was some good stuff.
 
I like to pound them flat, then roll them up with a chunk of mozzerlla, a slice of tomato and some fresh basil. I dip the roll in some melted margarine then bread crumbs (crushed rice krispies are good too). Place them on a cookie sheet lined with foil and sprayed with Pam. Bake for about 20 to 25 minutes at 400 degrees. :stir:
 
I throw them in the crockpot with some Fajita or taco seasoning, then shred them for tortillas. Super easy, my kind of meal LOL.
 
We eat a lot of chicken. If we had chickens living near us, they'd be scared....

Once a month we make, "little chicken things." We cut them up into about 1 in square pieces, bread them and deep fry them. We usually sprinkle some with hot sauce and devour them!!
Dh makes these chicken lasagna roll ups, too. I don't have the recipe but I know it uses lasagna noodles, chicken (duh), ricotta, mozzarella, italian seasonings...

We're having feta chicken tonight. it's actually a recipe from athenos so you could probably find it on athenos.com

I'll try to think of some more b/c i have a ton of them :)
 
My family loves this recipes and it is really easy.

Bake boneless chicken breast is a 350 oven with a can of chicken broth until just about done. Make a box of chicken stove top stuffing while it is cooking.
When chicken is about done take out of oven and put stuffing on top of the chicken and put mozzarella cheese on top of the stuffing.
Put back in oven until cheese is melted.

Enjoy!!
 
My mother in law makes Chicken "Crap" on Rice (only she uses another word for "crap."

Cut up however many chicken breasts you have (or need) into bite sized pieces. Cook in a little butter until almost cooked through. Add a can (or two depending on number of people feeding) of cream of chicken soup and frozen mixed vegetables (straight from the bag). Simmer for about 10 minutes until the veggies are warmed through. Serve over cooked plain white rice.

Sort of like Chicken a la King. Yummy and fast!!
 
My 2 favorites are Shake n Bake and Chicken Cordon Bleu (roll it up with deli ham and swiss cheese)
 
My favorite things to make with chicken breasts

Chicken Divan
Chicken Parmesan
Chicken fried rice
Chicken casserole(with rice, cheddar cheese, water chestnuts, mayo, cream of chicken soup and pimentos)
Baked chicen filled croissants

My wife MeanLaureen makes something called "chicken in wine sauce" that is awesome, especially if you make it the day before and let the flavors meld together.

She browns the chicken breasts in butter then puts them in a cooking dish and covers them with white cooking wine. While they are cooking she mixes cream of chicken soup, milk, sour cream and probably some spices in a saucepan on the stove. Once the chicken is done she takes the wine she was baking the chicken in and stirs it into the sauce. Then she covers the chicken and puts it back into the oven for a little longer. She serves the chicken over a bed of rice. The family loves the sauce so much she ends up making a double recipe of just that part. :teeth:
 
I'll dip the chicken in egg whites, coat in a mixture of italian seasoned bread crumbs and reduced fat parmesan cheese, then bake until done. I serve it over whole wheat spaghetti and plain spaghetti sauce.... delicious and healthy!
 
If you like curry, I have a creamy chicken curry recipe I could share. It's really yummy. :) I also have a great recipe for creamed chicken.

Also, have you tried Montreal Chicken Seasoning? That stuff is great. I know you said you're tired of grilling it, but this seasoning makes it so good.

Scrapper can be chefs too. Not sure what you consider much feedback but there are 8 replies and one of them has several recipes. Just because the CCS board doesn't move as fast as the CB doesn't mean you won't get feedback. You just have to be patient and not judge. :rolleyes1
